I wanted to come back today to share a recipe that I enjoyed today. Since Lori and I have been extremely busy here lately we needed I quick snack to get us through. And this recipe was born.
Now this recipe came from two inspirations that we have already made before. One being our quick cake that we enjoyed awhile back and the second recipe inspiration came from our individual protein muffin.
The recipe is made up of just 4 ingredients plus some cardamom for flavor. I am obsessed with that spice. Anyone else? This recipe is gluten and grain free. Also featuring a new sugar that Lori and I are trying out called Erythritol. Have you heard of it?
Pure2raw recipe: Quick one minute protein muffin

Serves: 1
Ingredients:
- 2 tablespoons flax meal
- 2 tablespoons protein powder (we used vanilla brown rice protein)
- 2 egg whites
- 1 tablespoon Erythritol sugar
- 1/2 teaspoon cardamom
Directions:
Place all ingredients into a glass cup. I used a glass measuring cup.
Stir together.
Place glass cup into microwave for about 1 minute and 30 seconds. Time will vary depending on your microwave. So start with just one minute and go from there.
That is it! Enjoy!
Now we normally do not use our microwaves that much. So if you are not a fan of the microwave you may bake in the oven at 350 degrees for about 20-30 minutes. The microwave for us is usually used only when we need something made really fast.

This quick protein muffin is simple, tasty, and in between a dense muffin and a light cake. I topped my muffin with some coconut oil. mmmm so good!
