New recipe

Hello again,

Well I managed to get some work done today. I was in the kitchen making some raw goodies to send to mom and sister back home in Florida. They requested some treats…raw brownies bites, raw yacon snack bites, raw apple cookies, raw cinnamon raisin snack bites, raw Brazilian nut snack bites..just to name a few things that are going in my dehydrator.  Our family does not have a dehydrator, so they put their orders in.

A lot of people ask about dehydrators. When Lori and I first went raw we did not have one. We had a food processor and blender. We lived off smoothies, juices, and salads. Then as we learned more about raw foods and what you can do we decided to get a dehydrator. We have the Excalibur Food Dehydrate with 9 trays. Now there are two of us plus we have our own raw foods line, Pure2. So most people do not have to get the 9 tray one. There is a smaller one that has 5 trays that would work well for most lifestyles.  Now when we got the dehydrator we were all excited, but the funny things we never used it. About a month, maybe longer, went by and we finally got around to trying it. Now we use it all the time. We make a wide range of goodies from cookies to pie crust to flatbreads in it.

Today for lunch I had our famous onion spinach flatbread with romaine lettuce. I did not have much in the fridge, so I had to make due. Plus sometimes I enjoy simple meals that do not require much ingredients. Luckily I already had the bread made, so just a quick rinse and chop of the romaine lettuce and I was good to go.

We make a variety of flatbreads….onion spinach, onion pepper, swiss chard, kale, and zucchini. We love to have these with our salads or great with raw hummus or slices of avocado on top. At the farmer markets we sell the breads with a spread. Our spreads again vary on flavor. Lori and I have enjoyed bringing raw foods to the market. Most people are not familiar with it and always so surprised how good it is….that they can really taste the flavors of the foods and spices because it is so pure. Nothing artificial has been added to it, nothing has been cooked out….just pure goodness from Mother Earth herself.

Okay now to my new recipe. Well like I said before I did not have much food left in the house so I had to make due with what I had. I created a broccoli parsnip dish…and it was surprisingly good. I try to get more broccoli in me…it contains important cancer fighting phytochemicals.  I got the idea from one of my favorite raw chefs, Chef Russell James. He truly is one of the greatest Chefs in the raw foods world. So check out his website and blog for more information and you will see why I think so highly of him.

So here is my version of his broccoli in hoisin sauce with parsnip rice. In his recipe he uses tamari, well I do not eat soy so I had to change the recipe around a bit, plus I had broccolini.  Here is what I did:

In a small food processor I place my broccolini and chopped it up a bit. Now I did this because I like my food chopped up because easier for me to digest…I am a fast eater so this helps me chew better. Then I place chopped broccolini into a small bowl and I poured 1 tbsp of lemon juice with 1 tbsp olive oil, and set aside. Now in the same food processor I put about 3 tbsp tahini, 1 tbsp olive oil, 2 tbsp lemon juice, lemon zest, a drop of yacon syrup, a dash of apple cider vinegar, 1 garlic, 1 slice of fresh ginger, and 1 peeled parsnip. Pulse it up till well combined. Then I plated as show above. Now I am the type of eater that likes to combine everything on plate, so here is how my plate looked

It was so good. I recommend you try your own version of this recipe and please share it with me. Some reasons I love raw food:

  • alternating recipes to make then different or better than last time
