Chocolate for Breakfast, yes please!

Hello everyone

Let me just say we had a pretty good day today. Our morning started with this:

Yay, so far off to a good start. Nothing like chocolate for breakfast. The wrap was made of raw cacao, dates, avocado, vanilla, sea salt. The filling was fresh coconut meat, vanilla, cashews, sea salt, and maple syrup and then topped with banana slices and strawberries…oh and drizzled it with a chocolate sauce.

Now that hit the spot!

Today’s workout

After feeling energized from our breakfast, we decided to go for a run today. We took a break from running to help our body learn to take energy from fat not carbs, so today we had no real expectations. We managed to run/walk 5 miles. Both felt great until we reached our last mile home…our legs were tired. We did our walk/run routine to ease back into running, and we both noticed our speed was quicker when we were running so we were excited about that!!!

Then we did about 30 minutes of yoga after our run. We notice that yoga really helps keep us lose, which is great for running.

Post-workout meal: Juice

Today’s juice we made it a little bigger than normal due to the lack of water we drank this morning (we slept in, what can I say). It was full of cucumber, celery, kale, ginger, arugula, apples, and watermelon (got fresh  a farmer yesterday).

The juice was very refreshing!

Next meal of the day was another chocolate haven! It was our leftover coconut chocolate pudding that we have been snacking on all week. You know it is a great day when you get to have chocolate twice : )

Dinner tonight is something Lori is creating: Guacamole with our sunflower kale chips.

Guacamole:

  • 2 avocados
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped white onion (Lori loves onions!)
  • 1 tbsp lime zest
  • 3 tbsp lime juice
  • 2 tbsp hemp seeds
  • 1/4 cup fresh cilantro (lightly packed)
  • pinch sea salt

Mash together in a large bowl with a fork.

While I am writing this post Lori is complaining to me that she is hot. She is cooking food for her boyfriend for the week. haha she sure does not miss cooking!

And we are having a small side salad to go along side out guacamole and chips and a glass of wine!

There is something so peaceful about devouring a bowl of fresh guacamole with “healthy” chips!

Here is what Lori was making for her boyfriend. We were actually testing 2 new gluten free vegan pizza crust recipes.

Guacamole is pretty much my favorite EVER! I can eat it all day long and never tire of it.

That chocolate crepe looks fantastic! Do you have an exact recipe?

Hello Erica

Yes we love guacamole too! I think we even have 1 avocado a day : ) Yes the chocolate crepe was delicious! We do not have an exact recipe, we are not good at always writing down recipes. We tend to just throw things together, but is made up of avocados (we used 2), raw cacao powder, dates, coconut flakes, vanilla, & sea salt. And we used chia powder and water as the glue but you could use flax meal. We blended it up in a food processor and then dehydrated for about a day.
