Great First Day at 105 degrees academy

Hey everyone

Just got back from my first day at 105 degrees Academy! But before I started my day I worked out this morning with Gina. (Gina has been my angel because she is nice enough to drive me around places because I do not have a car here!) I walked uphill on the treadmill for about 15 minutes to warm up…my legs were a little tired from yesterday’s run. I guess that is what I get from not running in a while : ) Then did about 20 minutes of weightlifting, which I did upper body, 2 sets for every muscle (shoulders, back, tri, and biceps). Then headed back to the treadmill and did an uphill climb for 45 minutes.  I really felt great plus so glad I got up first thing in the morning. I will try to do this every morning that I can while I am here.

I did not really eat much when I got back because I was not sure what they would be feeding us at the academy. So had an apple to hold me.  And wouldn’t you know I was greeted with this:

Whitney (Ladan’s assistant) poured everyone a wonderful green juice. Then class began.

There are 9 of us, which is a perfect size because you are really involved in everything plus we all had our own stations and tools!! We were all handed the rest of class tools: binder(for notes, glossary, outline of class, recipes). Then we took a tour of the whole place…restaurant, kitchen, and juice bar. It is really amazing you just have to come check it for yourself.

Love the organization. Sure wish Lori and I could get our kitchen to look like this! Hit: Sis I expect this when I get back…haha.

Into the dehydrator it goes…each student gets their own dehydrator for our work in the class. How awesome is that!

Then we made some almond milk. Now I have made it once before but it has been awhile so it was nice to get refreshed!

Next we were allowed to create our own smoothie using some of the almond milk (the rest will be poured over the granola for breakfast…I cannot wait) I love being creative in the kitchen, which my style of cooking is taking a little bit of this and that…no measuring here!

The criteria was to make a chocolate smoothie.

Here is what I made- Mint powerhouse almond smoothie:

  • 2 cups almond milk
  • 1 frozen banana
  • 1 tbsp mesquite
  • 1 tbsp maca
  • 1 tbsp cacao nibs
  • 2 tbsp cacao powder
  • 1 tsp spirulina ( I have to have greens!)
  • 1 tbsp coconut oil ( for energy)
  • 1 tbsp vanilla
  • pinch of pink sea salt (inspired by malted chocolate tart I had yesterday at the 105 degrees restaurant, the salt just made the dish!)
  • handful of fresh mint leaves

Blend and enjoy!

This totally hit the spot. I was thirsty and a bit hungry. I sipped on this while catching up with the sis on the phone…just one crisis that I had to help resolve.

Then we cleaned up and did prep work for tomorrow. We are making more nut milks…I chose to do a pumpkin milk, never had it so excited to taste it!

But before we were dismissed for our first day, Matthew came in to greet us and thanked us for being apart of the first class. Although I am thankful for him for creating this great academy!! I will be forever grateful : ) Everyone in Oklahoma City are very lucky to have this great restaurant for every day enjoyment which is opens up to public September 12. We better see all of you there.

All in all it was a great day and it will only get better!

I am so excited for you! What a wonderful opportunity! Lori is holding down the fort for you so you can bring back a whole new depth of ideas and techniques! Have fun,enjoy every minute :) I am so proud of you for this venture….Keep us posted. Love you, Kath

Heidi, 105 degrees was a great experience for me and I recommend it for raw foods culinary school. I would keep emailing and calling them till someone gets back with you and they should. Hello Ladies! I wanted to tell you what a great thing you have here. I stumbled across your site looking for raw recipes using stevia. WOW! You guys are fantastic. I am learning your meals and reading your recipes and I am amazed. I cannot put the computer away and go to sleep cuz I am so intrigued! :)
