Hey everyone,
Hope everyone had a great weekend. Mine was good, no bull riding though: ) I did have a few glasses of wine last night with Greg. We were talking about our time here and what we plan on doing after school ends. I really cannot believe it is my last week here at 105 degrees. I am going to miss it. I have made some great friends and fell in love with yoga….a week from today I will be back in NC.
Well to get my week started Gina and I went to the gym this morning. Due to my few glasses of wine I was not feeling so hot this morning, so I took it easy at the gym.
My workout:
I walked 15 minutes uphill walking.
15 minutes of upper body lifting
30 minutes of uphill walking.
My post workout shake: Vega protein with maca, chia, turmeric, Stevia* and cinnamon
*People have asked me what brand of stevia do I use. The brand I use is SweetLeaf and it is the only brand I use. I love it. I have tried a few others but Sweet Leaf Stevia is what I like the best.
Today in class we started testing our recipes for our final. Our final project is to create a 3 course meal for Friday’s graduation! Over the weekend I worked on my ideas and recipes and today was the test. My salad and salad dressing come out pretty good just a few tweaks on the dressing… and thanks to Ladan for helping me plate it : )
First I made my raw papaya jerky, although we did not have papayas so today I tested it out on mango
I sliced them thin, drizzled them with olive oil, lime juice, salt, cinnamon and cayenne
Then dehydrated them for about 2-3 hours
They came out perfect!! Almost like fruit roll-ups, remember those as a kid??
I used them as the base for my tropical salad
Spinach, rainbow sprouts, blueberries and raspberries drizzled with my lime ginger dressing.
Ladan made some juice for us to sip on while working on our recipes : ) It was good…a very green juice!
Then I moved onto my coconut rice sushi logs. Now Lori and I have made something similar once before that we sold at the farmers market: fruit sushi. We have seen this done before but we put our own twist on it.
So for my entree I wanted to make a tropical version hence coconut rice:
I added curry and cilantro for color….they tasted amazing just were not holding together so I am remaking them tomorrow.
I made one topping for the sushi: caramelized onions
I cut them into 2 different shapes because I am not sure what one will look best…I forgot to take a picture of them when they were done dehydrating, but they both came out perfect. I tossed them with olive oil, salt, and I made my own jerk spice mix.
I then made my cake batter for my cupcakes but forgot to take a picture. I realized I forgot to take many pictures, my mind was everywhere today. Tomorrow I will do better! I even almost forgot to have lunch so I quickly threw this together:
My lunch: green smoothie
A blend of mint, swiss chard, coconut water, maca, chia seeds, spirulina, and pears…pretty good!!!
Then I moved onto to my fillings for my raw cupcakes. I am making mini creme filled cupcakes, which I will finish tomorrow. So check back in to see the pictures!!
One thing I did remember to take a picture of was the raw caramelized bananas for one of the cupcakes:

This was my first time making raw caramelized bananas. I just blended dates, water, agave and cinnamon and stirred in chopped bananas, then dehydrated them for about 2 hours.
Well I am exhausted from today…mostly mentally tired. My mind was every where…still got a few things to work on but hopefully tomorrow I will have more completed recipes!

And the mango jerky..really interesting flavor combo with the salt and the cayenne and the evoo…I am not surprised it worked though. Kinda a mango with a kick fruit roll up thingey.
And your little rice bars with that white lookin’ frosting stuff…yum!

I use SweetLeaf stevia too! I use Sweetleaf Stevia Plus (with added fiber)in all my fruit smoothies, and it is YUMMY! I just experimented with Sweetleaf Liquid Stevia flavors, like Lemon Drop, Orange Valencia, English Toffee, and Vanilla Creme in just a tad bit of plain yogurt. The chocolate flavors didn’t fit the yogurt very well, in my opinion, but the above flavors were pretty good with it, and I plan on trying more of it! ! SweetLeaf is also the ONLY brand I will ever use!
