Hello everyone
Sorry for the late post today was one of those day. I stayed after class to help in the kitchen because they had a busy lunch crowd : ) which is great but now they need to catch up.
But first here is what we did in class today:
Raw yogurt
into the dehydrator it goes
Fermented Nut cheese
Once water squeeze out now it sits to continue draining
Time to make Vegetable summer rolls
This was our lunch today…so good!!

Vegetable rolls with mango tamarind chutney with toasted salty coconut

Next up: Black Mission Fig Tart with Walnut Creme
Tart ingredients: walnuts, brazil nuts, dried figs
We got to add whatever we wanted so I added lavender and cloves to the tart shell

Tomorrow we will finish making these….plus playing around with kelp noodles tomorrow

So as I mentioned I stayed after class to help out and the kitchen. Then after making some chocolate tart filling and blue corn tostados…I made myself this
Oh yay....green smoothie!!!
Oh how I love green smoothies, this one is full of basil, swiss chard, bananas, spirulina, maca, chia seeds, coconut oil, and cacao…oh and hand a handful of pee pollen!
Totally hit the spot.
Now I am heading off to have a dinner with Gina and the girls. It is a blog girls night get together! My first one- I am excited!

I posted a similar comment on gena’s blog but i am struck by my ironic twist today…but just today before i read her blog, I was reading Raw Food Real World by Sarma & Matthew and was LOOKING AT the collard wraps. I just got a mandolin (today!) and am wanting to do cucumber wraps and collard wraps and voila, here you are. The mango tamarind sauce looks and sounds heavenly. What kinda filling do you use in the wraps? They have one in the book, I’m wondering if it’s the same?
Yes I think the filling in the book is similar to the one did. It was a almond-chili dressing and filled with various veggies…cucumber, carrots…and mango and coconut flakes. Good luck with the mandolin!
Everything looks so enticing. You really are so lucky to be doing this course, but I bet you guys are getting way tired?
Yes it gets very tiring but worth : ) especially being on your feet all day but hey at least we eat good food!
