Zucchini pasta anyone?

Hello Everyone,

It is L. Well my Monday night dinner was zucchini pasta salad and some delicious raw ice cream for dessert! I wanted to share with you how I made my zucchini pasta. It is actually very simple to make when using a spiralizer (a veggie spiral slicer). This is a great tool to have if you don’t already have one. You can find them off Amazon.

sept pure2 blog pics 715Next you clean your zucchini and get ready to slice it up into pasta… sorry about my machine being a little dirty. I just got done doing my dressing for it and touched my machine with my dirty hands! (A big no no for taking nice clean pics) Promise I will do better!

The final product is zucchini pasta! It is that simple! But easier than making fresh “cooked” pasta out of white flour, etc. The leftover zucchini stick is so funny looking!

Here is my basic salad with some chopped leeks on top.

sept pure2 blog pics 733My zucchini pasta salad – basically I just throw my zucchini pasta on top of my bed of lettuce!

sept pure2 blog pics 736Now I know when most of you have seen raw zucchini pasta it is typically by itself with a marinara type sauce on top. I tend to make mine a little different because I like to incorporate as many greens as I can into my diet and I just like the different textures from the veggies in my dish! I like to do things a little differently. You could also do the pasta plain with a side salad.

Dressing ingredients:

  • -1/4 cup almond meal
  • 1/4 cup nutritional yeast
  • 4 tbsp lime juice
  • good pinch of lime zest
  • 2 tbsp olive oil
  • pinch sea salt
  • pinch cayenne
  • 1/4 tsp turmeric
  • 1/2 tsp chili powder
  • handful of fresh cilantro
  • 2 tsp yacon syurp

-Blend in food processor.

sept pure2 blog pics 744Now, this was just a creation I threw together and I must say it was not bad. It might need a few minor tweaking, but overall pretty good. Once I put it on the salad all the flavors really came together. I like it because it was a light sauce!

This is a great recipe for a light dinner but full of flavor. You could also throw in some radishes or peppers for more color!

Now this is how I ended my night

thank you for this tutorial! ive seen everyone talking about spiralizers and showing these crazy machines but never actually understood how it actually worked! :) and that raw ice cream looks aah-mazing. have a great day!

Ohhh wow, your post, is exactly like my post that I put up a couple days ago the first few pics…same spiralizer, same zuke shots, the same skinny long zuke remnant (I call it something a bit more adult like on my bloggie LOL) but your dressing looks really awesome and something I need to tweak a little and work on for my zuke noodles. I just love my spiralizer…to death. And think I’ve blogged spiralized food every day for like 5 now, I better change it up, huh?!! :)
