KELP noodles…we received our package the other day!! I am so excited : )  I think that should last us a few weeks days. LOL !

Well we received some excited news today from the older sis….oh it will be big but just can share what it is exactly until it is confirmed in a few weeks, so stay tuned : )

So how did we feel after our first long run in 3 weeks???

Both felt good today, just a little soreness in the calves…damn hills, haha. So we are feeling pretty happy with our recovery. We can definitely say our improvement in recovery is from our newest eating habits….that we are really making sure we are eating foods that nourish us and fuel us!! Eating a plant based diet is one of the best ways to improve your performance because it is easy to digest and is full of the ingredients your body needs NATURALLY!

We finished the Green for Life book by Victoria Boutenko today and LOVED IT! Wow we learned so much within these pages then we ever learned in school. They just do not teach you these type of things in school…ugh…why when it can change people’s standard of living, which means improvement in health!!

Everyone needs to read this book…we are sending it home to our family so maybe they can finally understand why we eat the way we eat! Just in time for the holidays, hopefully this year we do not have to explain to them why we do not eat turkey…do you dread holidays because you are seen as different? What do you do to not get stressed during this time of year? Does you family accept the way you eat, or try to at least understand?

Our family is slowly understanding but somehow ever meal we have to explain it all over again.

Anyways after reading the book Lori and I realized we were not getting enough greens into our diet. But first I need to explain one of the most important piece about the book….GREENS are NOT VEGETABLES. Greens are in their own caterogy of food…so you have fruit, vegetables, greens, etc. This explains why green smoothies can have both fruit and a green because everyone knows fruit and vegetables is not proper food combining. Greens are not starchy like root vegetables…actually they help digest other foods by stimulating the secretion of digestive enzymes, therefore making greens able to be combined with other foods.

The main benefit of green smoothies, is not only to get your greens in but eating them in the best way. Victoria says, “To release all the valuable nutrients from within the cells, the cell walls need to be ruptured. This is why eating greens without chewing them thoroughly would not satisfy our nutritional needs. We need to chew our greens to a creamy consistency in order to get the benefits.”

This explains why when I eat salads, same for Lori, we get extremely full and gasy. One we eat them way to fast but also we were not CHEWING our greens enough to make them easily digestable. Blending your greens up in a blender does the work for you…so you can simple just sip and reap the benefits without effort.

Now you may be thinking…I do not like the taste of kale or bok choy…well the thing about green smoothies you get to add fruit which provides the sweetness. The ratio you want to aim for is 60% fruit and 40% greens! So there is no excuse for not getting your greens in ; ) LOL> I know easier said than done. I will admit it took a good year on raw foods to finally actually crave greens…now I want them all the time. It is a slow process, so ease into it with one green smoothie every morning then over time your body will lead you to drink more.

Lori and I aimed to get 1 lb each of greens a day…which once we weighed out how much that exactly was we realized we were no way getting enough greens in our diet before, which makes us wonder about every other American?? We honestly feel bad that so many people could be feeling better just by having one green smoothie!! Victoria did a study and had a group of people consume one green smoothie once a day and change nothing else in their diets….and about over 66% improved in just one month, which was amazing due to the short time frame!! So if that is not reason enough to drink green smoothies, then I am not sure what is. I guess people like to feel bloated, gasy, blocked up or enjoy going to the doctors every month…not ME!! I want to feel good so I can live life!!

Victoria believes that it is possible to restore one’s ability to like and CRAVE healthy foods…well so do I!!!  And to quote Victoria again, “Greens are the primary food group that match nutritional needs more completely.”

So Lori and I did manage to get 1 lb of greens today in the form of green smoothies…so we had a total of 3 smoothies today. We were both amazed of how much greens that took to get us to 1 lb. We wanted to get 2 lbs, but realized we better start slowly and let our bodies get used to 1 lb.  So we were feeling pretty proud of oursleves…

BUT then around 4 pm in the middle of our yoga session our older sister called us like 6 times so we decided we better answer… and then she spilled the good news. So Lori and I decided to celebrate in honor of our sister and made ourselves a wonderful dinner!! You have to try this recipe…

Kelp noodle soup with roasted squash and an optional side of sliced avocados with lime juice (one of our favs) And if you are wondering we each eat one avocado!!!!

CIMG6385The reason why we called in noodle soup is because the sauce made so much and it was good we wanted it all…ya we are pigs like that : )

Recipe:

1 bag of kelp noodles, rinsed and cut up a little

Sauce

about 1 cup roasted winter squash** (we had a mixture of acorn and buttercup) (which we roasted with coconut oil, coriander, cinnamon)

** this is our cooked food for the day. As many of you know we are slowly incorporating one cooked food in our day – to help slow down our detox

2 garlic cloves

1 shallot

2 inch spring of fresh rosemary

1/4 cup fresh basil

1/2 cup nutritional yeast

1/4 tsp sea salt

some water to smooth it out

Blend in Vita-mix to smooth.

Then we tossed the sauce with the noodles in a large bowl to coat evenly.  For the avocados all you do is slice then drizzle lime juice and salt.

We will end the evening with that…. time for our second glass of wine ;) Yes that is how we roll!!!

~I learn so much from you two!! I never thought about greens not being vegetables but it makes complete sense. And I have the same problem with eating my salads too quickly. ~I do dread the Holidays because our families eat so differently and don’t understand why our little family of four is eating the way we are. All the changes that we’ve made/are making have really only started this year and it’s still a journey for us. It’s strange to me that by simply eating differently you cause others to feel defensive.
Oh….and Congratulations on your marathon training. I’ve always thought that the Disney run would be such a fun one to do. :)

mmmmmmm love seaweed and greens!!!
smoothies are a GREAT way to get your servings of greens in-just toss in a banana and you can’t taste a thing!!
I started juicing! and i love it! and i actually love just eating the mulch-gotta get that fiber! i think i’m going to be addicted to carrot juice!

I am very impressed with the amt of greens you green girls are putting in! That’s awesome! I do eat alot of veggies, a pound a day probably, but not just greens, a mixture of whatever is seasonal.

And I can get those very kelp noodles at my WF. They’re fine, but you two are makin em look mighty awesome! I did one meal’s worth in peanut sauce. I coulda called it peanut noodle soup :)

Kelp noodles are so good, and easy to prepare. Love them.

I also drink a lot of green smoothies to make sure I’m getting enough. They are quick and convenient, especially now that little lady is around. Actually, I toss a handful of greens into just about everything I stick in that blender. Smoothies, puddings, soups, etc. … they all end up green in my house :-)
