One Word: Obsession

Happy Hump Day everyone

Great news we both woke up with NO SORENESS from our 13 mile run yesterday :)   Our legs felt great we both said that we could run today if we really wanted to! Guess our recovery time is speeding up due to all the alkaline foods we are eating.  Great news for our marathon training. Hopefully we can really start pushing ourselves on our runs.

We also wanted to say thanks to all those great comments about out long post yesterday…. glad to see everyone like it and learned something!

Ok… we are totally obsessed in love with kelp noodles. As you can tell this is our second night having them this week… and to warn you — they might appear again ;)

We started our day with a typically large green smoothie that we ended up drinking throughout the morning. Lunch was a quick avocado lime pudding because we had a few errands to do. Our late lunch was trying out a new juice and smoothie spot in Carrboro. Sorry we forgot to take pictures we were in a rush to meet a client. But we plan to go back and will take pictures :) We both got two smoothies to hold us while we finished our errands.

Got back and squeezed in a quick mini workout session. We did about 45 minutes of leg exercises, kick boxing and some yoga! We just put on some good music and knocked out the workout. Short and sweet!

Our little workout sure made us both hungry!

Semi Raw Thai Coconut Noodles

Ingredients:

  • IMG_10471/2 cup  coconut milk (we use the light version not because of calories but because we prefer the taste better)
  • 1 lemongrass (about 2 -3 inches), chopped
  • 1 can artichokes (although we used about half), chopped
  • 1 bag kelp noodles*
  • 1-2 tbsp fresh grated ginger
  • 2 large handfuls of fresh basil (about 1/2 cup)
  • 2 large handful of fresh cilantro (about 1/2 cup)
  • 1 head of bok choy, rinsed, chopped
  • 2 pinches sea salt
  • black sesame for garnish
  • 1-2 tbsp sesame oil (we used non toasted but toasted would be fine)

*You can sub zucchini noodles which we each too, although we love kelp noodles because of the nutrition content but also because they are already to go. No special machine, no extra cleaning…just rinse and cut!

Kelp noodles are mineral rich, low in carbs, calories, and fat-free, free of all allergens! We also love it because of its neutral taste, so you can really have fun with the sauces : )

Directions:

Rinse and cut kelp noodles

Cut up bok choy, cilantro, basil, lemongrass, and artichokes. Place in large bowl.

Toss in ginger and coconut milk.

Mix together…this is the FUN part, so get your kids involved : )

Okay lesson two: Garnish

To garnish: hold up arm high over the plate and lightly drop your garnish. Let it fall on plate naturally!

We really enjoyed this dish. ALthough to some it may have been a little plain, so if you like heat please add some. here are some suggestions:

Add cayenne, paprika, red pepper flakes, garlic, onions, or jalapeno peppers…whatever you are in the mood for just have fun!!

Love the idea of coconut milk, art hearts, lemongrass, cilantro all together…that alone has sooo much potential for me :)

This looks so great! So yummy! When I have used these in the past I can’t get past the smell/some weird taste they have (for me at least). Did you rinse them a lot or just once? Do they get soft or are they still a little ‘bouncy?’ I want to get them again but have been ambivalent b/c I did not have the best experience. But this recipe looks amazing! Thanks for posting! Much love to you guys!

Adrienne yes try them again. We rinse them pretty well which helps with the smell. And we have noticed we have to kelp noodles with a thick creamy sauce of some sort and let it sit which helps with the texture. Let us know if you try them again!!

That recipe may be semi-raw, but I’d still eat it. Yum!

By the way, thanks for the Vega. I may eat a lot of raw cupcakes, but I mostly live off smoothies. They make life easier when you’re a mom.
