Happy Friday Friends,
Thanks for all the lovely comments about us being vegans! We are glad you all enjoyed the food pictures we sure enjoyed eating them!
As many of you know we are leaving this Saturday after our farmers market to head home to Florida! Though we are stopping to see the beautiful Gina for the night than finishing our drive on Sunday to Orlando, FL to stay with the older sis for a few days before we all leave to head home (Ft. Myers) for the holidays!
I must say Michelle and I have been non-stop all week from cleaning, to birthday orders, to holiday orders, to farmers markets, to blogging and creating fun recipes, and PACKING! Still have some packing to do.
We are sure looking forward to some down time.
Our workouts for the past few days have been a little different. We mentioned earlier this week that we were doing shorter runs this week instead of one long run. We managed to do some yoga on Wednesday, ran another 6 miles, core exercises and push-ups on Thursday, and today we walked for 40 minutes and did 30 minutes of yoga! Not bad for such a busy week with little sleep! Must be from all those cocktails kombucha’s and green smoothies that keep us going
Our mid-morning shake: coconut water, coconut oil, spirulina, maca, and royal jelly.
Overall we are both physically feeling strong and good. During our runs we have been pushing ourselves to run a little faster. Mentally I am still struggling a little though today feeling alright… it must be due to it being a beautiful day outside. I am not giving up though… I know I will figure out my hormones and get back to being balanced soon

Our food for the past 2 days has been a little off too. ;/ Hey it happens, even to us!
We still have been enjoying about 2 green smoothies a day, finished off our raw sauerkraut : (
Here is our raw sauerkraut with some cucumber slices and simple dressing that we used for our creamy spinach topped with some black sesame seeds…and we ended up adding nutritional yeast on top!
(Though made some raw yogurt) Also been enjoying salads, puddings, and some sweet treats courtesy of Twin Cakes
Yes we treated ourselves to some of our gluten free vegan low glycemic, soy free and corn free cupcakes!
We have a few more things to finish up here for the market and order for tomorrow. And the last bit of cleaning and packing. Than hopefully for some shut eye

Today is another classic STUFFING
Theme Week – Holiday Meals
Today’s holiday meal is something I have always loved…. Ok the whole house always loved….. STUFFING! Now who doesn’t love a good plate of stuffing
Every since I have been eating gluten free vegan I have learned to be creative with my stuffing’s. In the past we would make our own gluten free vegan bread, but now that I do not eat bread I had to find a replacement. We thought about putting buckwheat in but then decided not to, but it would be a great addition.
Pure2Raw Recipe: Gluten Free Raw Vegan Stuffing
Ingredients:
- 1 apple
- 1/3 cup fresh cranberries, chopped
- 1 cup sunflower seeds, soaked
- ½ cup celery, chopped (about 2 sticks)
- ½ white onion
- 1/3 cup pumpkin puree ** we added that at the last minute – turned out great!
- 1 cup tea (any tea of your choice)
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp sage
Directions:
Gather your ingredients
Next pour tea into a large bowl and add start adding other ingredients to the bowl as well
Basically we let the ingredients soaked in the tea for about 15 –30minutes. We use that us our broth… and it helps marinate the ingredients to give more flavor!
Drain ingredients
Place ingredients into a food processor
Pulse a few times to get a little chunky
Add in the pumpkin puree** Stir all together!
And dinner is served (along side some raw sauerkraut)
So yummy! Making this again for our thanksgiving dinner!
Now we ended up topping our dinner with some nutritional yeast

Ok so I normally hate stuffing. I hate sage. And I can’t do gluten. So 99% of stuffing is not my thing. But yours is!!!
OMG wow, this is amazing! I wouldnt make quite as large a batch, and not sure if I can really do raw onion as I am soooo sensitive to onions and garlic (not only am i dairy/soy/gluten intolerant but I cannot process onions & garlic not that you care but anyway LOL) but this is like a great nut/seed pate with fruit and veggies with a T-Day twist. Love it!
HAve fun w/ Gina and your family. We used to spend Xmas in Ft. Myers when I was a kid b/c we had a condo down there and it was alot warmer than MN where I grew up!
