Theme Week: Raw Desserts
Good evening friends,
Today was yet another rainy cold day here in NC. It has been hard to keep the spirits up day after day of cold nasty weather … though this did help
And a few bites of this
Glad everyone has been liking our no nut –dairy free raw ice cream!!
Today was supposed to be a run day in our marathon training though due to the rain (and only getting 5 hrs of sleep) we decided to do yoga and move our run day till tomorrow.
Twin Eats:
Breakfast: green smoothie
Mid-morning: a glass of the rest of our homemade kombucha tea
Lunch: 2 slices of raw onion chia flatbread plus apple pie and ice cream. Not a bad lunch eh?
Lunch sure hit the spot… though do plan on re-creating our apple pie again before the holidays. We think it could be a tad better although we did inhale it down… ummm.. guess it was good?
Afternoon snack: a glass of water kefir and hot cocoa
Dinner: green smoothie (purple kale, frozen organic peaches, lime zest, coconut water)
Twins Workout:
Clean whole house ( I have 2 flights of stairs to go up and down on) that counts as working out right?
45 minutes of yoga
push-ups, ab work, and some lunges
Overall we both felt alright today… we both did not sleep well. Did manage to Get a lot of work done and got to play in the kitchen some our favorite thing to do… can you tell? We can get a little crazy with recipes.
In honor of dessert week we created a new raw apple pie recipe. Last year we made one following one of our favorite raw vegan chef’s Ani Phyo, apple pie out of her first cookbook. Loved it! And ever since than we have seen a variety of apple pies out there so we wanted to try creating something on our own. So what do we do… grab some ingredients and get to work and hopefully remember to write it down.
Luckily this time we remembered to grab a pen and paper!! But most of the time we are just like ok throw some of this in and some of that, blend. And that process continues till we are satisfied with the results.
Pure2Raw Recipe: Raw Apple Pie Stack
Ingredients:
Apple pie filling-
3 small granny smith apples (or apples of your choice, local apples would be great!)
date paste ( ¼ cup water with 8 pitted dates)
1 tbsp vanilla
1 tbsp sunflower lecithin
1 tsp cinnamon
1/8 tsp nutmeg
2 tbsp yacon syrup (or any liquid sweetener of your choice)
Directions:
Make date paste first in the blender
Add vanilla, lecithin, yacon and spices to blender and blend.
then transfer it to this beauty food processor with the remaining ingredients.
We cut the apples before putting in food processor so they would all be the same size.
Add apples to food processor and make sure everything makes it in : )
Wait MAN OVER BOARD!

haha okay stop all this silliness…
Back to the recipe.
Pulse it up a few times or till desired texture.
We left ours a little chunky
Then place on Dehydrator sheet. This step is optional, we did it to warm it up : )
Crust:
- ½ cup ground sunflower seeds (have been soaked, drained, dried)
- 1 cup ground pumpkin seeds (have been soaked, drained, dried)
- ½ cup ground almonds (have been soaked, drained, dried)
- 4 dates
- 1 tbsp vanilla
- 2 tbsp coconut oil (liquid)
- 2 tsp cinnamon
- 1/4 tsp ginger
- 1/8 tsp nutmeg
Place ingredients back into the dirty clean food processor.
Pulse till it starts coming together.
Sailor: May day may day we have a problem…it’s not binding!
Captain: Quick we need an apple
Hero: Apples
Sailor: This looks better
Captain: A little soggy but it will do
Sailor: Hard lesson learned: Next time maybe only half an apple!
Captain: Rookie mistake!
(we are laughing while we are writing this, can you tell, and no alcohol involved : ) this is great)
Transfer mush batter to a bowl.
And prepare to build.
Grab your fancy tool cheap kitchen utensil you have that will hold the shape as you build. We used a Pampered Chef measuring cup.
First layer is the batter. Press down with fingers to flatten.
Next layer is the warm apple pie filling.
Repeat this 3 times or however many you would like. We did have leftover batter, which we will save and freeze for another time.
*Note the batter itself is not that sweet but when mixed with the ooey gooey apple pie goodness it all comes together!
Final Product
We added a bit of creamy cashew maple spread on top for color! It just needed something else : )
Just blend soaked cashews with maple syrup!
Look all the yummy layers…
Drizzled it with maple syrup….Perfection!!!
It was yummy, you have to make it and see for yourself. The Captain and Sailor agree : )

Ok great minds think alike….moments ago I just posted my raw vegan apple crumble. I’ve been posting it for a few months, but hadnt posted it recently and just decided to today. And then my reader shows you girls had a new post…and voila, apple pie! Albeit yours is much fancier looking than mine. I love how yours is stacked!
And I love how you got it into your dehyd. I coulda stopped at that point and made like warm granola-apple bar things. That woulda been awesome for me..but you went and stacked it. Too delish looking!

This rain is just relentless isn’t it?!?! What is going on, I don’t think we’ve had constant rainfall this bad since I can remember :/ I hope the sun comes out for the weekend though… fingers crossed!
