A few reasons why we love raw chocolate covered chocolate chip cookie bites

Theme Week: Raw Desserts

Good Morning everyone,

Thanks for all the encouragement in regards to my hard run yesterday…I am doing much better today :) Stomach is fine and no body soreness… feeling great! Ready for some yoga today!

Lori and I are so happy to share this recipe with you all. As many of you know we try to do as much as we can with either no nuts or less nuts in our products. (Our bodies just don’t handle a lot of nuts very well) So we created this chocolate chip cookie without nuts!!! Normally this recipe we do a mix of nuts (like walnuts and Brazilian nuts), buckwheat, and coconut flakes as the base. Though we wanted to create little cookie balls, in honor of Operation Chocolate Covered Kindness, and make it with no nuts… and here is what turned out

Are you ready for some chocolate chip cookie madness ;)   We are pretty pleased with how they turned out! Though we had to increase our agave and coconut oil due to not having all the fat from the nuts. So you kinda have to choose do you want nuts or more agave and coconut oil. We like to get variety in our diets so when we can get a recipe that works with no nuts than great…. because a lot of raw recipes do contain nuts and sometimes you really just need to use a nut!! To get the results you are looking for in the final product.

Pure2Raw Recipe:Chocolate Covered Chocolate Chip Cookie

Ingredients:

  • 1/2 cup coconut flour (coconut flakes grounded up)
  • 1/4 cup soaked and rinsed sunflower seeds
  • 1/4 cup soaked and rinsed pumpkin seeds
  • 2 tbsp agave nectar
  • 2 tsp vanilla
  • 1 tsp coconut oil (liquid)
  • 2 tbsp chocolate chips (we did half regular chocolate chips and raw cacao nibs)   * though you can use any kind of chocolate chips you like

Directions:

In the food processor toss in your seeds, coconut flour, agave, vanilla, coconut oil.

Pulse till combined.  (sorry for dark pictures – I need to stop doing new recipes at night)

Take your cookie dough mixture and place in a large bowl

And add your chocolate chips. And stir!

Scoop with either spoon or tablespoon and form into little balls.

Now set these babies in the refrigerator or freezer while you make the chocolate sauce!

Pure2Raw recipe: Chocolate Sauce

  • 1/3 cup coconut oil (liquid)
  • 1 tsp vanilla
  • 3 tbsp agave nectar
  • 6 tbsp cocoa powder ( we did a mix of carob, cacao, and lucuma)

Place all ingredients into a bowl (we did ours in glass measuring cup – so classy)  and stir till combined.

Pull out your cookie balls and get ready to get messy! ;)

Take one ball and dip it into the chocolate madness!

Isn’t he so cute!  :) ** Warning it does get messy and from cookies being cold the chocolate pudding started to get hard!

Place cookie back on plate and continue with the rest of them!

Ok… enough of all the silliness. Here is the final product after it has set in the freezer for about one 20 minutes!

Now that is what I call a raw chocolate chip cookie!! We were good girls and only had 4 balls each!!! :)

Why we enjoyed this recipe:

  • No nuts
  • And it took only about 15 minutes from start to finish ( due to doing the second part of dipping in a chocolate sauce)
  • Easy clean up (licking fingers included)
  • No baking required
  • Full of vitamins and minerals from the seeds, coconut oil, and cacao
  • no worries about getting salmonella
  • you can eat as many as you want and don’t feel heavy!!

On a serious note :) … do you think I can use stevia instead of agave? (maybe adding a bit more liquid to make up for stevia being a powder?)

Yes I think you can do stevia (we prefer stevia as well). I would up the coconut oil a little and maybe add in some water or a date. If you make this recipe again with stevia we will share with you!

First, I LOVE that there’s no nuts!!!!!
I make cookie dough balls but it’s 2/3 cashews, 1/3 oats.
Love that yours are no nuts or grains really.

Love the step by step tutorial to see what i should end up with at each stage.

Question: do these taste really coconutty? With the coco flour and the coco oil and then the coco oil in the choco coating? Just wondering b/c soemtimes it overwhelms things a bit..but regardless, they look amazing!!!!!

Thank you it is always nice to know that others appreciate the use of less nuts. Glad you liked the tutorial we are trying to do a better job of showing things!! No they actually don’t taste that coconutty… well as least not to us. The taste of pumpkin seed helps with that and it is not too over powering sweet.

Thanks for the follow up re the coconut. I hate it when coconut overpowers stuff and I know some people adore coconut oil and I like it to a point, but sometimes it’s too much. Good to know about the seeds balancing it.

Is your source for coconut flour and seeds of all kinds Natural Zing, Raw Food World, where do you buy from? I am assuming not WF due to the prices..

I understand you 2 are vegans but – I have to say I am a cancer survivor and my health coach highly recommended a good quality fish oil and NOTHING I did to try and duplicate the affects of fish oil worked for me. Your last entry reads a lot like my own recent journaling of ups and downs with emotions. I had been on various natural supplments and nothing worked worked like this fish oil. I am not selling it so it serves ME no purpose to tell you this except that I know how it feels to not feel like yourself no matter what natural supplement or food you put in your body. I have struggled for 4 yrs as a post treament survivor with anxiety depression, brain fog (chemo brain) and ALL of it was significantly reduced when I just switched to a pharmaceutical grade of fish oil. also as vegans, its crucial you get iron and b-12. Iron you can get in greens, b-12 isn’t found in ANY food source other than animal protein and supplements need to be sublingual because your gastric acids destroy it in any other form.

I used stevia, and used unsweetened coconut milk for a little extra moisture. These are absolutely phenomenal, rich and delicious treat!!!
