Raw Pumpkin Cranberry Layer Kreamcake

Good evening friends,

How is every one doing? Big weekend plans…. well Lori does – she is off to Canada for a friends wedding. For me, no big plans but work… got a few orders to do this weekend.

Hope everyone liked Lori’s post earlier today or least got you thinking. We both just care so much about everyone’s health that we wanted to share what we have learned and noticed in our health involving fitness. It was a doozie for a Friday afternoon. ;)

Ok now onto the food!!!

At the farmers market tomorrow we are taking a new recipe and wanted to share with all of you. We are pretty happy with the results :) We made this late last night…. so bare with us we did not really write anything down… all based on memory.

Raw Pumpkin Cranberry Layer Kreamcake

Ingredients:

Crust- use any crust recipe you like (you can even use a raw brownie or raw macaroon as your base)

** ours was a mixture of dates, almonds, pumpkin seeds, coconut flakes, coconut oil, vanilla, agave, and sea salt

Blend crust ingredients into food processor. Pulse till well combined. Than fill your pie pan or pan of choice. Press firmly.

First layer: Pumpkin Kreamcake

about 3/4 cup to 1 cup pureed pumpkin (fresh or canned)

8oz cashew butter

7oz coconut oil

3-4 tbsp maple syrup (or agave if pure raw)

1 tbsp vanilla

1 1/2 tsp cinnamon

1/3 cup water

1/4 tsp cloves

1/4 tsp ginger

1/8 tsp turmeric (it helps with color)

Directions: Blend in vita-mix till creamy and well blended. Than pour on top of crust in pie pan. Let set in fridge while you make the second layer.

Second Layer: Cranberry Kreamcake

About 1 cup of cranberries

1/2 cup coconut butter

1/3 cup coconut oil

1 zest of an orange

good drizzle of agave (sweeten till your preference)

2 tsp vanilla

** add water to Vita-mix if really thick (can’t remember if we put some in there or not)

Add all ingredients in vita-mix and blend till well combined.

Pull pie out of refrigerator and top with cranberry layer. Set back in refrigerator to set.

And enjoy!

We did ours bite size cakes…

Although we had leftovers so we made into 3 cupcakes

Twins Workout:

40 minutes outside walk

45 minutes of power yoga flow from Yoga Download. Gina was right… you do get obsessed! :)

Here is our Twin’s eats:

2 green smoothies

1 pre-workout shake

1 post-workout shake (hemp protein based)

Dinner: A glass of water kefir and a wilted spinach avocado salad with sesame seeds, nutritional yeast, coconut vinegar, sea salt, lemon juice, and spirulina.

Those cupcakes look divine! The pink is just smashing! And it looks so cheesecakey and awesome, I would love to make teeth marks in it :) YUM!!!!!

Those look delicious! Cranberry + Pumpkin makes them perfect for Thanksgiving! I’ll definitely be trying them soon…

Coconut vinegar is a new obsession of mine. I just was tired of apple cider, so I was looking around and Living Tree Community sells it. It is yummy you must try!
