Yummy chocolate cream cake recipe

Hey everyone

How is everyone’s Sunday going?

Ours started with some fresh grapefruit juice mixed with some coconut water and spirulina and stevia. I know it may sound weird but it was actually really good.

Later we enjoyed our green smoothie before we went for our run today.

Filled with mint, parsley, ginger, water, chia seeds, and papaya drizzled with yacon syrup

Well we are finally starting to get our workout groove back. It turned out to be a beautiful day here in south Florida so we took advantage of getting our Vitamin D :)

Twins Workout:

  • 4 mile run outside
  • push-ups
  • abs

Both felt great, so happy to get a good workout in finally!

So as promised we are going to share one our favorite raw desserts.

Raw Cheesecakes or as we call it Cream Cakes

This recipe might sound daunting, but it is so easy and delicious.

Ingredients:

Crust

1 cup pecans, unsoaked  

1/3 cup, medjool dates (pitted), roughly chopped

1 cups coconut flakes

1/2 tsp sea salt

1 tsp vanilla

Directions:

Place all ingredients into food processor.

Pulse till combined, it will be light and fluffy.

Press into bottom of pan. We used a 8in spring board pan.

First line bottom of pan with parchment or wax paper

Filling

1 1/2 cup cashew butter

1/2 cup coconut oil

1/2 cup agave

1/2 cup water

pinch sea salt (optional)

1 tbsp vanilla

3/4 cup cacao powder (raw chocolate powder)

Directions:

Place cashew butter, agave, water, sea salt and vanilla to blender. Blend till smooth.

Add in the coconut oil and blend.

Then end with cacao powder.

Blend till combined.

Pour into pan on top of crust, we sprinkled some cacao nibs (optional), you may use chocolate chips if you want.

Then place in freezer…that is it. No baking required. : )

Pull from freezer and let come to room temperature for about 20-30 minutes.

Slice and enjoy : )

Keep remaining slices, if any, in the freezer!!

Verdict:

Everyone loved it!!!!

Loved that it was not too sweet.

Texture was perfect.

Flavor yummy.

Easy on the tummy to digest.

Full of antioxidants and vitamins (gotta love chocolate)

One of the healthiest cheesecakes you could ever have!!! See you can still eat healthy and enjoy desserts too with no guilt!! :)

OMG That is lovely. It’s sooo thick, dense, and perfect looking. I’ve made a version of Ani’s regular cheezecake before but the choc and your recipe take the vegan cake on that one :)

OMG, I made it as a birthday cake for myself and it is sooo good:) I was trying to copy Lydia’s chocolate “cheez” cake which was sold out at the store and this was a great substitute! Thank you!!!

Hi twins!

My friend made me discover your amazing website. Love it. She and I decided to make this cake when having more friends over for supper. It was a great success! Ours turned out quite darker, different cocoa I guess (not sure ours was raw, unfortunately).

One question popped in my head, though, when reading the line « One of the healthiest [and most delicious!!!] cheesecakes you could ever have [...] ». Well, yeah maybe, but what about the coconut oil? Its so much saturated fat… Studies and websites have shared feelings about it, and I don’t exactly know what to think about it… Have any info?

Emilie – glad to hear everyone enjoyed the raw dessert!! Good question – the reason we say it is healthy because it is made up of ingredients that the body is familiar with, so therefore the body can use it for energy and all. Not store it as fat. In terms of coconut oil there is a lot of different opinions on it, but it is made up of medium-chain fatty acids, it increases metabolism, removes pancreatic stress, which allows for more energy to be burned by the body.
Coconut oil promotes healthy enzyme and thyroid functioning and is easy to digest. This is why raw desserts even with coconut oil can be “healthier” than their counterparts. Although dessert is still dessert. So still needs to be enjoyed in moderation. I hope this helps answer your question.

I love it!

Although I don’t indulge in many raw desserts lately, I’m slowly getting my mom on the bandwagon with tons of delicious raw desserts I make in the kitchen! The smell of cacao makes it irresistible, and she absolutely loves the taste now of raw desserts – so many delicious flavors, textures, and in her and my dad’s words ‘boom’!. (Apparently the flavors really ‘pop’) :)

Anyways – I made them into cuppie cakes to make them personal cheesecakes, and they’re ah-mazing.

Do you think almond butter would work in this cake? Cashew butter is hard to find here and is more expensive…Thanks!

Crysta you could use almond butter, just going to provide a little different texture and taste, but still should turn out. Let us know if you need anything else.

I have been seeing lots of vegan recipes with cashews and pecans. My son is allergic to all nuts except almonds and macadamia nuts. Have you every tried any of these raw vegan recipes with almonds and macadamia instead of the cashews? I would love to make them for my family but leaving him out is not an option :)
