Lime and carrots

Hello luvs,

How was everyone’s weekend? Flew by didn’t? Why do the weekends have to go by so fast!!!!!

Anyways, Michelle and I ate very well over the weekend with some usual and not so usual eats!

Snacked a on few of these during the day – carob donut holes. :)

Lunch was something we just thought of last minute but turned out to be amazing. We wanted to have ‘grilled’ cheez so we put this sandwich together with a twist on it ;)

We took our pure2raw sunflower seed flatbread and put some of our ‘nacho’ cheez sauce in between and voila you get a raw gluten free vegan sandwich!

And dinner was something a little bit more labor intensive ;) Not really it just looks that way!

Acorn squash kraut stack!

We made a twist on Michelle’s classic and delicious coconut stack! I love these types of meals, so pretty and absolutely to die for :) I am always craving one of these fun meals. They are pretty easy to make and so worth it in the end!

A random dessert we had was another version of our carrot cake that we made into cupcakes and topped with an avocado lime frosting. Yes lime and carrots! I know may sound weird but we love lime and avocados together so we said why not trying it as our frosting for one of our carrot cake cupcakes. And it turned out great!!!!!!!

Another day Michelle and I enjoyed a big bowl of fermented veggies, sauerkraut and fresh cilantro. Topped with some of the leftover sauce from our acorn squash kraut dish! Marvelous!

The sauce is a keeper! Simple and so light and refreshing!

Our breakfast on Sunday was a thick pudding green coconut kefir (sorry it is un-pictured). This pudding was a mix of coconut kefir, kale, apples, sunflower lecthin, and maca. Surprisingly delicious! I loved how thick it got. We made it the night before and let it set in the fridge overnight which helped get it to be pudding like!

A pre-workout snack was a little bowl fill of dates, coconut flakes, chia seeds, lemon juice and coconut oil.

I know it may not look the prettiest but it sure hit the spot and got me ready for my workout!

After a great workout we enjoyed a 20 oz glass of fresh juice

Juice was carrots, beets, pears, and celery with a splash of lemon juice.

And going along with our love or kelp noodles we made another wonderful pasta dinner. This noodle dinner we added in some fresh salad mix from a local farmer. I must admit this was not the best sauce on its own but when the whole dish came together it was fabulous!

We tossed in some steamed brussel sprouts as well! Glorious!

And dessert was a few more carob donut holes! Yummy!

Well that is about it for highlights of our eats over these past few days!

We are get ready over here for the Fitbloggin Event this weekend! We are so excited to meet everyone and share our goodies with everyone :) As well as bring some of our t-shirts!!!

Lime anything…mmm, good. I made a lime mango salsa last week, but key lime raw vegan pie would be more my speed.
