Birthday treats

Hello luvs,

Thank you all for your nice comments and tweets!! You all sure made our day ; ) We wanted to take a moment and thank you all for your support!! Both of us enjoy reading and getting to know you all and love all the wonderful emails from our readers. We just wanted to let you all know we love each and everyone one of you and appreciate all that you do!

Okay now what did we eat on our birthday??

Well we started off with a smoothie as usual, right?? haha

Next up was a suprise…remember Lori’s post when she found her new favorite snack while in Barcelona??  Well I had to run to the store to get some things and I brought back a mature coconut!!! Yep we split it open and enjoyed ourselves some coconut chips!! Thanks to all our readers who told us more about them, we are forever grateful ; )

IMG_6816The infamous coconut chips…Lori would not stop talking about these, so I had to try them.

Verdict?

OMG!!! They were amazing! Honestly did not taste like coconut at all, which is kind of weird, but they were very addicting! A little work to get the chips, but so worth it! So next time you see a mature coconut, grap one and enjoy the crispy, chewy not too sweet reward COCONUT CHIPS ; )

Along side our coconut chips we had a huge salad…fresh greens from the farmers market truly make a world of a difference!

We just topped our salad with lemon juice and sauerkraut, simple and delicious!

And the best part of our lunch was one of Lori’s favorite newest cocktail

After finishing up some work in the kitchen, we finally got to make our birthday dinner!

Our dinner featured a new ingredient: Sea Spaghetti

IMG_6826Have you heard of it?

It is one of the most nutritious raw pasta replacements ; ) I have to be honest I was a little nervous to try it at first because the smell was pretty intense. We soaked the noodles for a few hours, then rinsed them well before eating. We split the bag in fourths, so we get to enjoy more later in the week ; )

It honestly looked like pasta, felt like pasta, and even the texture was like pasta…and best yet it DID NOT taste like seaweed at all!!!  So to all of you moms out there looking to feed your kids something better than pasta, check out sea spaghetti. The place we bought it from was Sirova, and so far this is the only place that sells it. If we find out any other places we will let you all know!

IMG_6839We covered our sea spaghetti noodles with lentils, sauteed spinach, and a coconut curry sauce! We plan to enjoy these noodles more : ) So stayed tuned for more recipes featuring sea spaghetti.

Yes yes we will share this recipe later, but first what did we have for birthday cake??

It involves our two favorite flavors: mint and chocolate

We are taking the night off and going to spend the night with my peeps, haha ; )

so glad you had a nice birthday girls! i am drooling over those coconut chips, i bet they are amazinggggg. we are obsessed with Avatar, well by “we” i may mean “me” haha but we watched it again saturday night. such a fabulous movie!

Oh and I agree that you don’t look a day over 20, but seriously for being only 27 (I’m turning 27 later this year so I can say this since we are the same age), you are AMAZINGLY accomplished!!! How amazing that you are just barely 27 and you have a thriving business venture!

Love coconut in any form so snacking on mature coconut chips is a treat. Yum! Sea spaghetti huh? Interesting. Maybe I’ll be brave and try them sometime. :) Love that they don’t taste like seaweed. Bonus. That grasshopper cake looks heavenly!!!

My gramma made grasshopper pie once when I was eight and I’ve never forgotten it. So seeing that at the end of your blog definitely made my day! What a great treat! :)

OH MY GOSH! HAPPY BIRTHDAY!!!!!!!! 27? Yeah, you two look younger! That’s awesome! Or at least it will be! (people tell me the same thing! I usually don’t like it!)

Love to read of you enjoying Indian flavors and also enjoying pure coconut chunks. I know what you mean that they don’t always taste immediately like your stereotypical coconut flavor – there are so many shades to the taste! Also so many different varieties of coconut.

I love champagne and that cocktail looks delicious. Even more delicious is that grasshopper pie. So inspiring!

OMG!!!!!!!!!!!!!!!!!!!!! Mint is my fave ever!! I need this recipe!!!!! It looks amazing as heck!!! I made grasshopper pie for my fiance for his bday last year, we crammed it! We both love mint! I have always dreamed of a healthier recipe for grasshopper pie!!!!!!!!!!!!!!!!!!!!!!!!!!

Ahhhhhhhhhh and the sea spaghetti coconut dish looks to die for! I want to come stay with you girls for a weekend and cook and eat!!!
