Think: Macaroons!
And not just any macaroons but ones that do not require dehydration!
Michelle and I wanted to come up with a recipe that used a few ingredients, tasted great, and required no dehydration.
May I present you
Pure2Raw:5 Ingredient Strawberry Pistachio Bites
This recipe came to us because lately we have been craving pistachios! And so we thought what would go well with pistachios… strawberries and plus they are in season
And why not put the two flavors together?!?!
Ingredients:
- 1 1/2 cups coconut flakes
- 1/2 cup pistachios (ground into flour)
- 1/3 cup fresh strawberries, chopped
- 3-4 medjool dates,lightly chopped (about 1/4 cup or so)
- 3 tbsp coconut oil
Procedure:
Grind pistachios into flour by using food processor.
Next add in the dates and strawberries. Pulse till combined.
After the batter starts coming together add in coconut flakes and oil. And pulse a few times till just combined.
*or may hand stir this all though you will need to either make date paste, or use a liquid sweetener
Scoop into balls and set in fridge for at least 1 hour.
Than remove from fridge and eat cold! Or let come to room temperature. Either way they are a perfect grab and go snack! Well for me at least
Now go grab some local strawberries from you local farmers market before strawberry season comes to an end and whip this quick delicious treat!

These would be great for a light after dinner dessert. Make them up but with different berries. Set them out on a platter. It would look very upscale but be very simple!

Strawberry and pistachio? That’s my kind of combo! Plus these remind me of macaroons and anything macaroon like is right up my ally!

Made these last night!! Yummy. I think I’ll do cherries and almonds in the next batch. I have to say, I tried the Magic Bullet first and the Oster Fusion and ended up dragging out the giant Cusinart processor. So you definitely need a processor for these unless you make them by hand for a rustic one…
These are yummy and FANTASTIC!!! Great recipe – and so super easy! A great sweet, but not too sweet, treat!!! One is enough – doesn’t make you feel like you need to eat 4 of them to be sastisfied!
