Happy Cinco de Mayo

Happy Wednesday friends,

Any big plans for Cinco de Mayo?

We don’t! Well besides having a farmers market today ;)

We enjoyed an Indian dinner last Wednesday and wanted to share it with you all today in honor of our good friend Gina’s Indian Food Wednesdays!

Ever since Lori had her Indian food while traveling in Spain she forgot how much she loved Indian spiced foods. Therefore being back she has requested for some good Indian food and we thought of Indian Food Wednesdays of course ;)

We decided to create an Indian dish for dinner!

Pure2Raw Recipe: Indian Spiced Lentils with Spinach

Ingredients:

  • 1 small white onion, chopped
  • 1 tbsp coconut oil
  • 1/2 tsp turmeric
  • 1/8 tsp cardamom
  • 3/4 tsp ginger
  • 1 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 3 garlic cloves
  • 3 cups water
  • 1 cup lentils (we used a new product we saw in the stores- sprouted lentils)
  • 1 bag of brussel sprouts ( or whatever vegetable you have on hand)
  • 1 bag of fresh spinach

Directions:

In a medium skillet place 1 tbsp coconut oil over medium heat.

Place chopped onion and sauté for a few minutes. Next add in garlic, 1/2 tsp turmeric, 1/8 tsp cardamom, 1/2 tsp ginger, 1 tsp cinnamon.

Set the onion and brussel sprouts on low heat while you get your lentils going.

Place 3 cups of water ( we did 1/4 cup coconut milk and 2 3/4 cup water) in a pot and bring to a boil.

Once water is boiling add in your 1 cup of sprouted lentils.

Cook for 5 minutes. Than turn off heat and let rest for 2 minutes covered. Drain excess liquid and place lentils back in pot. Add in spinach and 1/2 tsp cinnamon, 1/2 tsp ginger and stir.

may 2010 p2r blog 172Place lentils and spinach in a large bowl. And add in onion mixture.

There you have it folks a delicious sprouted lentil Indian flavor dish that is sure to please anyone ;) I think the lovely Gina would approve :)

Lori and I have been loving our Indian theme dinners lately! Forgot how much I love cumin, cinnamon, and ginger all together! Perfect pairing in my opinion!

I love Indian food! My husband doesn’t like me to make it at home, because our kitchen will smell like it for days!! But, we did eat Indian food out on Friday night and it was wonderful!

i love indian…i actually have seen the sprouted lentils, mung beans and adzuki beans…now i know what to do with them!!!

That is very cool that the lentils are already sprouted. I love this indian dish too so simple! I think I’m going to make it for din din tonight!

Indian food in any form is delicious, maybe even one of my favorite foods. Although I don’t eat it enough as I should! Hmmm time to bring it back!
Growing up our neighbors, and family friends, were East Indian and made the most amazing homemade meals. I was definitely spoiled with their foods. I miss that!

I LOVE indian food, but only when it’s cooked at home. Whenever I eat it at a restaurant there’s always too much fat and I can taste it the next morning, not fun. Can’t wait to try this one :)
