Giveaway winner and seaweed salad dressing recipe

Hello friends,

As promised here is our seaweed salad dressing! It is light and refreshing.

Pure2Raw Recipe: Seaweed Squash Salad Dressing

Ingredients:

  • 1 yellow squash – medium size
  • 1/2 –3/4 cup coconut kefir
  • 1/2 tsp curry powder
  • 2 garlic cloves, peeled
  • 2 tbsp apple cider vinegar
  • 1 tbsp sunflower lecithin (optional it just helps bind the sauce)
  • small handful of both soaked nori and kelp seaweed
  • 1 tsp sea salt
  • 1/2 tbsp yacon syrup or 1 date

Directions:

Place all ingredients into a blender and blend till creamy. This dressing will be a little watery due to the water content in the squash.

Seaweeds are a great addition to any diet. They are full of vitamins and minerals like iodine. Seaweed absorbs its minerals and nutrients from the ocean, which has almost an identical mineral balance as the human body. Now who wants some seaweed?

By blending them up into sauces is a great way to enjoy them without having to deal with texture issues ;) It took me awhile to get used to the taste of seaweed and their textures. I have been noticing though I prefer them blended or pureed.

Ok, I’m a little late on reading this but WOW it looks great! I’m making this tonight for dinner!!! (I think I may have tried almost all of your recipes…) Love it!
So… all the ingredients above are for the dressing… what is in the actual salad part? What do you suggest??

Lori, the salad part was a mix of lettuce we got from the farmers market…romaine, green and red leaf lettuce, and some dandelion leaves. I think the lettuce needs to be a simple one if that makes sense? We also had sliced zucchini in there too!! Enjoy girl!
