Ice cream challenge

Hello friends,

Happy Monday to you all!

Well Michelle and I have been un-baking away these past few days working on some raw ice cream for the lovely Heathy’s raw ice cream challenge!

This was a challenge we were very excited about because we love ice cream especially raw ice cream ;) We love raw ice cream because it is easy to make, easy on the tummy, and easy on our figure!

Now we ended up doing two different ice cream cakes…once we made one the ideas of flavors started rolling in. Therefore we decided to make two and since there is two of us we thought it would be a great idea!

For the first ice cream cake we wanted a spring like flavor.

We knew strawberries are in season therefore that created the first idea of flavor (great for spring) and we just love lemons so we thought it would go well with strawberries. Than the middle flavor was just something we thought of at the last minute. We took Heather’s basic vanilla ice cream flavor and add some mesquite to it. Though the final mesquite flavored ice cream was not as strong ‘mesquite’ flavored as we would have liked therefore next time we plan on increasing the amount (we love mesquite)!

may 2010 p2r blog 136And the ice cream cones that we made on top for decorations we took Heather’s buckwheat crispies and added flax meal to them and dehydrated them. Then cut out into ice cream cone shapes :)

Ok now for the second flavored ice cream cake!

Now this was inspired by the talented Kristen.

Michelle made her cherry bomb shake a few weeks ago and raved about the flavors. Therefore we decided to take Heathers basic chocolate and vanilla and flavor them using the cherry bomb’s flavors!

Cherry Hemp Seed Chocolate layered ice cream cake!

We sprinkled the top and outside of the ice cream cake with grounded hemp seeds and coconut flakes. And we pipped the top of the cake with some cherry banana kreme.

I never really realized how much I really enjoyed chocolate and cherries together and the hemp seeds give it such a nutty flavor! Love it!

Have you made a raw ice cream cake before? Or any ice cream cakes for that matter? If so, what flavor combos have you done?

What is you all time favorite ice cream flavor?

Mine would be plain chocolate or mint. Michelle is hands down mint!

But this chocolate cherry hemp cake is pretty close to being my favorite :)

After doing this ice cream challenge really helped Michelle and I remember how much making raw ice cream is easy and tons of fun! And Heather’s recipes are easy and taste amazing! And you do not even need an ice cream maker – we do not and they turned out great! Thanks Heather for putting together this great challenge!

Also we forgot to mention this amazing mother yesterday! Sorry beautiful lady you know we love ya and that you inspire us everyday!

oh man…looks so good! i used to work at an ice cream store in high school and always assembled the cakes..i rather lost my taste for ice cream but i’d be willing to give it a shot if its raw and delicious like yours!

Doubly amazing! Those cakes are fantastic! I can’t wait to make my ice cream cake challenge for Heather’s blog. She is definitely great at coming up with awesome (tasting) challenges!
You two nailed this one. I love the star cone decoration on the first cake! So creative and pairs beautifully with the ice cream! And yum all the way with the chocolate cherry bomb flavor. Wow. I would LOVE to try your amazing desserts… well, the ones you can’t ship. ;)

Oh my heckengolly, those are some gorgeous ice cream cakes! I am eating “ice cream” for dessert every night these days, and I don’t see that ending anytime soon. Cookie dough ice cream is my long time favorite that I’ve yet to replicate. :(

Mama pea, oh my I forgot about cookie dough – that is another classic favorite of ours!!! I ate that flavor all the time when I was little ;) We have made one version of it on our blog before – we still plan on trying to another version soon. And when we do I will let you know!!! Yummy girls! It seems once people start on this challenge they can’t help but make more than one. Have you noticed that? ha ha! Your cakes look amazing and yes I would love a slice or two or three. :D I haven’t made any ice cream cakes before but I’m tempted. Actually, I plan on it – hopefully soon. And like you both, mint is always a winner! Love chocolate chip too. And peanut butter. And… :) Beautiful work! Love it!

Yum! I’m so impressed with those of you that have made more than one cake. You’re so ambitious & creative. Mine is in the freezer right now. My favorite ice cream is mint chocolate, but my cake is based on a favorite dessert of my 2 best friends & boyfriend. Hopefully I’ll have it finished by dessert time tonight :)

Beautiful! Can you believe – I’ve never had a piece of ice cream cake in my life?!? Looking at yours definitely makes me want to try and make one sometime.

My favorites: mint choc, as I’ve said before, is irresistible to me. But one time as a kid I was captivated by some honey and stem ginger-flavored ice cream – that would be fun to make. Chocolate and cherry is an awesome combo, and I love your use of mesquite. I’m just about to see if I can tolerate some mesquite myself, so great inspiration.

Another idea I’m having is of a whitish cacao butter/maca flavor with a goji swirl – sound good to you?

Ela- Yes cacao butter, maca with goji sounds interesting!! You have to make a ice cream cake, sounds like you have some great flavor ideas! Hope your body likes mesquite!

Wow girls you are sooo inspiring! I bought the same ice-cream maker we used at school. Is that the same one you use?

Sorry I didn’t get to order your stuff whilst i was in the states, i ran out of time :( I am dying to try them on my next trip to the states. Next time I will order before I leave here so they are ready and waiting for me :)

I love the big whipped icing blob at the middle of the star, it looks so COOL!!!

The cherry cake looks sooo yummy. I’m going to have to try that sometime :D .

My all time favorite ice cream flavor is cookie dough. And I made an ice cream cake with my two favorite flavors – cookie dough and pomegranate chip :D .

Incredible job!!! They both look so beautiful and delicious!
