Happy Monday! Where did the weekend go? Seriously I feel like life sometimes goes by way too fast!
60 Day Challenge- Insanity Recap:
Today is the beginning of our 2nd week doing the Insanity workout dvd program. Lori and I are still enjoying the crazy workouts!!! It is funny how I am actually looking forward to the workouts every morning. Ever since starting this workout program Lori and I went back to working out first thing in the morning. And I absolutely love it
By doing the insanity workouts first thing in the morning has really sparked my energy levels and revved up my metabolism for the rest of the day. I feel so great doing my workouts lately that I hate it when it is done… well almost. Insanity workouts sure make you move and sweat! My muscles fatigue after each session….as Shaun T says, “I’m smiling because I love it! ” Thanks to our friend Gina for recommending it!
Going along with feeling great from my workouts lately Lori and I have been re-creating some food that we have both enjoyed during our travels. And one meal in particular stuck with me. While I was in DC eating at Java Green I got their coconut noodle salad and could not stop talking about it! Therefore I knew I had to try to re-make it for Lori to try
Pure2Raw Recipe: Re-make of Coconut Noodle Salad
serves:2
Salad Ingredients:
- 4 cups of spinach
- 1 1/2 cups sliced coconut meat
- 1 orange bell pepper
- handful of fresh cilantro, mint, and rosemary
- 2 tbsp nutritional yeast
- 1 cup sauerkraut (optional of course-though we eat it with every salad)
Dressing:
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp yacon syrup (you could use agave, honey, or a date)
- 1/4 tsp ground ginger
Take all dressing ingredients and place in blender or a small food processor and pulse till combined. I was not really sure what type of dressing they used on their salad but I feel this one was pretty close. It was light and simple. Although you can use any dressing you prefer!
Grab two large bowls and place spinach, pepper, coconut meat, and fresh herbs. And toss. Next add in your dressing and toss again. Top with nutritional yeast and sauerkraut if desired. And mix all around!
Here is our final coconut noodle salad!

Having fresh coconut meat in a salad is a lovely treat and one I feel is worth opening up coconuts for!

Of course we put our own little twist in it. I just love the texture and flavor that fresh coconut meat provides in salads. Did you see our coconut bowl salad?

I absolutely love the idea of a coconut salad! It sounds and looks so refreshing.
I had a great raw pad thai at Candle 79 that used coconut noodles too. Delicious. It adds such a lovely richness. I love that you have recreate meals when you return from traveling – it make life feel like a permanent vacation
I’ve never made coconut noodles, nor have I used them in a salad! But I love the idea and yours looks so pretty!
Lauren, I know when Michelle told me that she had a coconut noodle salad I was not sure what to think. But once we made it I was surprised by how much I enjoyed it!

I agree about the amazingness of early morning workouts. Once I quit drinking coffee, it became a necessity to get to the gym, or the yoga mat, before going to work. It makes a huge difference on the belly too!

Wow, that looks fantastic! Love the colors, texture, and the dressing sounds great! Must make this! But I have had strips of coconut before in a raw dish I made. I wasn’t really a fan. It was something about the crunchy and slimy-ish texture that I didn’t quite like… but yours does look promising… maybe i could sub strips of veggies.

I though the same thing at first Lori, but when you open a young coconut you have the possibility of getting two different types of textures depending on the age of the coconut. You can get real soft (which is best for raw desserts and smoothies) and then you can get a firm texture which I find best for savory things. Put using all veggies would be fabulous too!
If only coconuts were cheaper and easier to cut up – do you have some tricks for easy opening of a coconut? That looks delicious!
I know Valerie, coconut are a treat for us, but thing worth the money! As for cutting up the coconut, practice, practice! When I was at 105 degrees we had to open case after case, so you just have to practice and you will get the technique. Next time I do I open I will take better pictures.
have never had raw coconut meat in a salad or made noodles with it. I only use the liquids and oils in my cooking, not the meat, but i want to start

In Thailand we had coconut in salad and other savory dishes, but I haven’t experimented with it since then. I do love noodle-vegs though – this really does look tempting! Coconuts are a little out of my bare bones budget though so I’ll just live vicariously through ya’ll til my next paycheck
ps – definitely motivated by this post to put my cardio in the morning for my challenge! Today was day one, check.
I just ordered Insanity, and I’ve been hearing such awesome things about it that I can’t wait to try it!! I’ve never had coconut in a salad, but I imagine it’s heavenly!!
i’ve been wanting to try coconut meat in salads…but am a little apprehensive…but after seeing this beautiful salad…i may just take the plunge…and i LOVE sauerkraut!!!!

Gorgeous salads! And yes, have used coconut noodles although not in a salad. Hubby made me some coconut-curry and instead of rice use coconut noodles. It was yummy!
