Mint Chia Kefir recipe

by lori on June 18, 2010

HAPPY FRIDAY FRIENDS!!!!

So happy to see everyone enjoying are easy vegetable pizzaI am craving it again!

june 2010 p2r blog 536 Michelle enjoying our newest favorite drink! Although sometimes we enjoy it as a pudding.

We have done a few different variations of this, but here is the basic recipe.

Pure2raw Mint Chia Kefir

Serves 2

Blend together in the Vitamix.

Here are some other variations we have done that we absolutely love just as much.

-add 1-2 small cucumbers

and/or

-add 1-2 tsp spirulina

and/or

-add1-2 tbsp cacao nibs

and for extra protein boost

-add 2 tbsp hemp seeds

We have some version of this everyday and love it! A great snack or sometimes ends up being our late-night dinner ; )

What has been your latest drink craze? What spring/summer flavors do you love? As you can tell we love mint!

Here are some fabulous salads we have been enjoying…

june 2010 p2r blog 477 Remember our sliced beets from yesterday’s pizza….well we used some to decorate our salad….you know make it look fancy, haha

Do you ever make your meals look fancy or just throw things together? We do both. Sometimes it is nice to make a nice plated meal.

june 2010 p2r blog 487 I know we have said it many many times but we love our salads. This one was a mix of spring lettuce with dandelion leaves and sliced beets dressed with avocado and lemon juice.

And last night’s salad was inspired by our friend Robyn. She did a great video on how to use the spiralizer. So we dusted off pulled out our spiralizer, which we have used in the past to make zucchini pasta with an almond cheez dressing.

We did not have any zucchini, so we used cucumbers instead!

june 2010 p2r blog 583

june 2010 p2r blog 581

Top with sauerkraut, lemon juice and hemp seeds

june 2010 p2r blog 587

And some crackers

june 2010 p2r blog 596

Love the crunch the crackers give to my salad, much better than croutons

june 2010 p2r blog 598

With a slice of bread

june 2010 p2r blog 589 Then a nice dinner date outside

june 2010 p2r blog 599 Equals = Happiness

Have a great weekend everyone!!!

Till next time,

Lori

Hey twins! I was wondering if you had any tips for websites/stores where you buy ingredients… for example, spirulina, chia seeds, maca, etc. are SO pricey at my Whole Foods and I would love to find a bulk provider. Thanks girls! :)

Yum! Mint Chia kefir…what’s not to like? Sounds awesome. =)

We’ve been loving mint this spring too. It is so abundant at the Asian market and cheap too! Does wonders for spunking up plain dishes.

You have such pretty beets you’re eating! ;)
That salad looks delicious. I love simple salads with the added creaminess of avocados. Seriously the best things in life contain veggies and avos. ;) And maybe some of your raw desserts or two. I love the recipe for the mint chia kefir pudding/smoothie! Sounds amazing. I have tons of mint growing wild (and crazy) in my backyard- so I’ll DEFINITELY be making this tomorrow for breakfast!
Yum to this post!
Happy Friday!!

I love the sounds of your mint chia kefir. Would you believe that I’ve never had kefir? I think I need to get on that!

On another note- has kombucha been removed from your local Whole Foods?? I was thinking about you girls when I heard the news yesterday!! Hopefully they get it all sorted out. Although, I’m sure local places will still keep it stocked even if Whole Foods doesn’t.

Thanks Brittany, and yes you must try kefir :) I think they are pulling kombucha off the shelves, it is sad they worry about alcohol, etc. There is barley any alcohol in them when it is all said and done. It is ok though, we have been making our own kombucha for a few months now. So we have a large supply of it at home ;) though it was a nice treat to get at WHF when were go there.

MMmmmmm beets+mint! Favorite! I saw gorgeous beets in the farmers market and passed them over for really really fun looking kale but I need to go back and get the beets!

I’m all about mint these days too – now that I have it growing in the back yard I have it with everything!!

I think I would like cucumber noodles more. I am not into zucchini noodles as much. I want a spirilizer, it would be fun.

Sweet! Thanks for posting the Mint Chia Kefir recipe!

My fave summertime drink – actually, my go-to drink, no matter the season – has been lemon infused water. That is, UNTIL I read this heartbreaking news the other day. {Hanging head in sorrow}

Recently, I’ve been on a Blueberry Smoothie kick. Looking forward to some Watermelon Kiwi Cooler in the coming weeks.

I love spiralizing! I spiralized carrots too (didn’t feel like chopping them-hee hee). And don’t you just love those beets? They’re so pretty.

I am a huge fan of fresh mint in smoothies! I should really get a pot of mint this week so I can feed this craving. I’m also thinking about starting some kefir. I just need to find a local source of water grains.

Hi, I’m wondering if you would ever consider selling your coconut water kefir? I live in PA if that makes a difference.
Thanks!
