HAPPY FRIDAY FRIENDS!!!!
So happy to see everyone enjoying are easy vegetable pizza. I am craving it again!
Michelle enjoying our newest favorite drink! Although sometimes we enjoy it as a pudding.
We have done a few different variations of this, but here is the basic recipe.
Pure2raw Mint Chia Kefir
- 2 cups kefir (we prefer our homemade coconut kefir)
- 1/4 cup chia seeds
- very large handful of fresh mint
- 1-2 tbsp lemon juice
- about 1 tbsp sunflower lecithin (optional, but we love it)
- 2 packets of stevia (we use SweetLeaf, although use your favorite sweetener)
Blend together in the Vitamix.
Here are some other variations we have done that we absolutely love just as much.
-add 1-2 small cucumbers
-add 1-2 tsp spirulina
-add1-2 tbsp cacao nibs
and for extra protein boost
-add 2 tbsp hemp seeds
We have some version of this everyday and love it! A great snack or sometimes ends up being our late-night dinner ; )

Remember our sliced beets from yesterday’s pizza….well we used some to decorate our salad….you know make it look fancy, haha
Do you ever make your meals look fancy or just throw things together? We do both. Sometimes it is nice to make a nice plated meal.
And last night’s salad was inspired by our friend Robyn. She did a great video on how to use the spiralizer. So we dusted off pulled out our spiralizer, which we have used in the past to make zucchini pasta with an almond cheez dressing.
We did not have any zucchini, so we used cucumbers instead!
Top with sauerkraut, lemon juice and hemp seeds
And some crackers
Love the crunch the crackers give to my salad, much better than croutons
With a slice of bread
