Freezer cookies and raspberry mint kombucha

by Lori and Michelle on July 23, 2010

Happy Friday!!! It’s Recipe Friday. ; )

Sorry for the late post, but to make up for it we got 2 recipes to share today!!!

We get a lot of request for stevia based recipes, so while we were in FL we created something new and different, even for us!!

Pure2raw Recipe: Freezer Cookies

july blog 2010 406

Special ingredient:

july blog 2010 057

Remember when we bought this guy, well we had to no idea what we wanted to do with it, so last minute we thought of making cookies with it. Similar to the classic peanut butter or almond butter cookies out there, just with P2R twist!

july blog 2010 412

Ingredients:

1 jar of pumpkin walnut brazil nut butter (8oz jar)

2/3 cup coconut flakes

1 tbsp cacao nibs (or you can use chocolate chips)

3 tbsp coconut oil

20 drop stevia or to taste (we use SweetLeaf brand)

The recipe is very easy to make because all you have to do is stir the ingredients together in a bowl. Scoop into cookies and freeze!!

They have a real “nutty” flavor!!! Perfect cold treat on a hot day. : )

Mom approved!! haha Our mom loved them.

And another recipe we get request for is flavored KOMBUCHA! We have been meaning to do one for some time, but honestly we just love our kombucha plain or with some lemon in it. ; )

But you all have inspired us to venture into flavored Kombucha!

Pure2raw Recipe: Raspberry Mint Kombucha

2 cups kombucha (we make our own so it is not flavored)

1/4 cup fresh raspberries

handful fresh mint

Blend in a blender! We ended up straining out the seeds from the berries, but you do not have too.

july blog 2010 1096 Love the foam on top!

This was a nice treat! As we were drinking it we thought it would be a nice cocktail with a little champagne or even sake ; )

Well hope you all have a great weekend!! We will check back in for Socca Sunday!

TIll next time,

Pure2raw twins

Ok the cookies look great but I love the berry kombucha!! I just started fermenting my own and I honestly never even considered mixing it up with berries and things. Looks awesome!! I am definitely going to make kombucha cocktails. Cannot wait!

Ilana – so happy to hear you make your own kombucha! This was the first time we flavored our kombucha with fruit, it was nice.

Megan @ Healthy Hoggin July 23, 2010 at 6:24 pm

Thanks for the recipe! I love any and all freezer cookies!! I haven’t seen that type of nut butter around here, but I’m sure it would be tasty with almond butter, too! I’m seeing some cookies in my near future! :D

Pure2 July 23, 2010 at 7:11 pm

Megan – yes I am sure almond butter would do great. You could even add some cinnamon to it too ; )

Katie July 23, 2010 at 6:29 pm

That komvucha looks so yum! I love that it has mint in it!!

Love the cookies too and love even more that they are mom approved!

Om nom nom? Wow, those look awesome! I have jars of nut butter I need to get rid of…hmmm…;-)

Mimi – yes these would be great for any nut butters, and can be easily adjusted for your taste preference. ; )

Run Sarah July 23, 2010 at 9:37 pm

Those cookies sound great – I have a jar of sunflower seed butter I’m not a huge fan of by itself, I may have to cookie-fy it.

Run Sarah – yes these would be great with sunflower seed butter, maybe even some cinnamon or your favorite spice would be great too!

bitt July 23, 2010 at 10:01 pm

what a great kombucha idea! once I get mine going I will have to try some flavors like that. yum! And a cookie would be nice with it too. :-)

Bitt – yes we were pleased with flavoring our kombucha this way. : ) Good luck with your kombucha, let us know if you have any questions.

I was wondering how those cookies were green!! I love Better Than Roasted, I bet that tastes amazingg. The kombucha looks beautiful. I’ve been missing my booch lately. They took all the good ones of the shelves. :( I’m thinking I need to get a scoby from Avery very very soon!

Can’t wait for Socca!! haha

Jackie – the cookies are green because of pumpkin seeds in the nut butter. It was a pumpkins seed walnut brazil nut butter ; )

TWO brilliant ideas! I’m all over the freezer cookies, especially in this Gawd-awful heat and humidity.

You gals always kick up your kombucha with fun concoctions, which I always say I’m gonna do, but don’t. Same ol’ same ol’ for me. I need to get with the program and start experimenting with flavors.

Pure2 July 24, 2010 at 10:50 am

Earth Mother – I know we are the same, this was the first time we actually got around to flavoring our Kombucha. We had fresh raspberries on hand, so we thought we would give it a try. : )

MarathonVal July 24, 2010 at 7:49 am

Ahhh you make me wish I had stuck with my kombucha making, but alas I gave up and threw away my big glass jug haha. Those sounds SO good with the raspberries!!

Lauren July 24, 2010 at 2:31 pm

I love flavoured kombucha! I’ve actually never tried the plain kind. I really love cherry and peach flavours. I’ve never made my own kombucha either…I would have to find a scoby first and I have no idea where to get one around here. I love the addition of raspberries and mint though!

The freezer cookies look great too. I love anything from the freezer…I eat frozen fruit a lot. I just like the texture of it. And that nut butter looks amazing! These are great recipes.

Lauren, there a few places online where you can get scobys. It is easy to make kombucha, we have a video of us making ours.

emma July 24, 2010 at 4:44 pm

Girlies!! Yey for those cookies – I’m totally gonna make some of those as they’ll be a great pre/post run snack :-) The kombucha sounds wonderful andf I love the “I blog all day” T-shirt!! Love you girls xoxo

Thanks Emma! yes the cookies would be great for working out.

Averie (LoveVeggiesAndYoga) July 24, 2010 at 10:23 pm

love the flavored kombucha! I cheat and use mango juice from a jar sometimes like 6 oz komb + 1 oz juice..so good! I honestly love it plain though…it one of those things that I actually don’t like sweet…rare, but true :)

great recipe on the freezer cookies too!

Pure2 July 25, 2010 at 6:25 am

Averie – never had mango with kombucha sounds, it sounds good.

Nicole @ Making Good Choices July 25, 2010 at 4:53 am

I love making freezer cookies/balls/granola bars. They are so easy, sometimes it’s tough for me to actually get it into the freezer without eating all of the dough first! Thank you for the sweet comment on my blog too btw! :)

Pure2 July 25, 2010 at 6:26 am

Nicole – we have the same problem, whenever we know we have something good in the freezer it is hard not to eat it all up.

nelly July 26, 2010 at 10:10 am

love the kombucha flavour…yummmy! i really need to start making my own…need to find a scoby!
