What we do on Fridays

Hey luvs,

I am happy to hear everyone loves the idea of Socca Sunday! I’m already looking forward to this Sunday ; )

Lori and I never really showed much about what we do at Twin Cakes, so we hope you do not mind us sharing.  We have shared how we became bakers here and here.

Our Fridays are pretty busy. We start our day just like every other day with our morning workout. Ever since we started doing Insanity, a little over 2 months ago, we started to do our workouts first thing. We just love getting them done because we used to do our workouts later in the day, which things would happen and some workouts had to be put on hold.

After our workouts, we start prepping for a long day/night of baking. We pretty much spend our Friday in the kitchen – baking, cooling, icing, cleaning, packing, wrapping, counting, etc. We usually end up getting around 2-3 hours of sleep, as we get up around 4am on Saturday mornings to start getting the cars packed for the market. We have gotten better with doing more packing the night before, but somethings we like to do right before….quality purposes ;)

Although with the heat and humidity it sure does a number on our products. Gluten-free vegan products do not do well in the heat….or very cold temperatures. If you have ever baked gluten-free baked goods, you will know that every little thing can alter the product. We try our best to control what we can ; )

Our very popular brownies…we bring a variety of flavors! They are rich, fudgy and delicious ; )

A new item: Un-baked Pistachio Coconut Bar…these went quick!

Another top item - SCONES! We bring about 3 flavors each week.

As we continue to bake into the night, we do start to crave something sweet. It can be hard to work around all these sweets sometimes ; )

A Perfect Meal!!

Our little treat after a long day….standing on your feet can be pretty tiring.

Then we do some more clean-up, paper work, packing, then off to bed for a few hours. As I mentioned we try to get at least 3 hours.

Remember when we mentioned we need help with breakfast ideas to have before our market. And we normally have been enjoying some type of avocado pudding, quinoa, or a mighty breakfast.

This past Saturday we decided to change it up. Since it has been so hot out, we have been making ice cream a lot lately. We have been testing them for our cookbook. Then I remember seeing Gina enjoying some protein ice cream via Heather. I have also made an avocado protein pudding inspired by Heather before.

So we decided to give the protein ice cream a shot for our breakfast before the market! We just added some Vega to our already made ice cream. It was great, even at 4:30 in the morning!

Okay time for the markets. Yes we do two markets, Lori is at Carrboro and I am at Durham. *note – these pictures are from my market.

I love being able to sell out of my car. It makes it easier to reload things when they get low. Also, un-pictured is a cooler behind my table.

Thank you for sharing this behind the scenes look at your bakery. I love the face that you guys have taken charge of your life, and are doing what you love. Kudos!

By the way, I can’t wait until your cookbook comes out! Since going gluten free, my baking has been riddled with FAILS!

Oh man, I got tired just reading this post. Your Friday sounds exhausting, but I can tell you both love what you do.

I think the carrot cakes would be my favorite too – bet it would taste delicious crumbled over some maple cinnamon protein ice-cream. ;)

yes i know how heat and cold can affect gluten-free things. and with no eggs it is trickier too.

I love reading and learning about your businesses! It’s all so interesting! So, for the markets, how many of each item do you bake/ bring? I’m sure it depends but on average? It must be a great deal of work preparing! A lot of baking for sure! :)

Lori, the numbers vary of how much we bring. One is the weather and two if there is something special going on at the market, oh and the what month it is. Since we have been doing this for 3 years, we have learned what months get slow. It varies every week, crazy! Hard to guess sometimes how much to bring.
