Lentil cucumber mint salad

Hello friends,

I am so happy to see everyone enjoying socca. As I mentioned it is addicting ;) but in a good way! Ever since having it for the first time in Nice, France I have been hooked!

A few nights ago Michelle and I were inspired by Sabrina’s lentil zucchini mint dish. We had our sprouted lentils and mint on hand therefore we give her recipe a try with our twist on it ;)

The changes we made to the recipe:

  • used a cucumber instead of zucchini (we did not have zucchini on hand)
  • did all lentils and no bulgur wheat (we did this to keep it gluten free, though I am sure any gluten free grain probably would have done fine with it)
  • made our own ‘feta’ topping

Our topping to resemble cheese was hemp seeds and sesame seeds, a.k.a P2R mock cheese crumble, pulsed a little in food processor.

Dinner is served!

Seriously addicting! I loved every bite. I forgot how much I love mint and cucumber together. And with the lentils in there added a nice compliment to the whole dish!

This dinner really hit the spot for me. It was simple, easy to make, and tasted amazing! A great thing about this dinner is that it was gluten free, vegan, and a few ingredients.

I plan on making dishes with cucumber and mint more often. I really loved the combination.

This morning’s pre-workout snack was a little mush (as Michelle and I like to call them)

A mix of chopped dates, chia seeds, bee pollen, coconut oil, and mesquite.

Workout for today was:

30 minutes of a mix of cardio and plyometrics exercises.

Definitely my first marathon was the hardest thing I’ve ever done… because it was the infamous Chicago Marathon 2007 and temperatures got to over 100 degrees. It was like the apocalypse, people were passing out left and right and all I could hear were sirens and ambulances taking care of the fallen runners… it was absolutely crazy and SOOO hard. Thankfully other marathons I’ve run since have been much more enjoyable! :)

Val- wow! That is crazy. I would say that is the hard to get through, those temperatures are crazy for a marathon! I am glad others races have been better for you :) xoxo

Hardest thing was moving away from my hometown a year ago, but it was the best thing too : ) it’s what was best for my family and I : )

Biggest Achievement was adjusting to being in a new place! Well not really, I modeled for a long time and have had many great things I achieved through that! I say just being a wonderful person, living with love, and being good to those who are good to you , is a great achievement everyday!

Katie, I agree moving away from home can be very difficult. It was hard for me to live my family and friends as well. I am glad to hear that you are adjusting to your new place :)

Your dinner looks absolutely amazing. I can’t believe that looks like real cheese.

Hmm. Athletically: running my marathon and learning how to swim. Those were so hard for me!!

Moving is still really hard although I’m an AF spouse. It’s getting a little easier each time though.

Yummy! I love lentils! Hardest thing: dealing with finding out I have a life long disease. Easiest thing: Getting my mind straight and handling head on..first thing was go vegan! :)

I love sprouted lentils! I don’t make them as often as I want to since I am the only one eating them. I do mung beans since we all eat them here! Your dinner looks delicious!

The hardest thing I’ve ever done is still ongoing – getting a phd. Mentally the hardest thing for sure.

Biggest achievement is getting my master’s degree. And doing it while staying sane!

That looks great! I also love the flavours of cucumber and mint too. I find them to be really calming and soothing, and they remind me of a spa…it’s probably all in my head, but hey, it works!

Your mush looks good too- I don’t really eat bee pollen (well, I’ve never actually had it) but I’m intrigued by mesquite. I’ve heard it mentioned by a lot of people who make raw dessert, but I’ve never tried it myself and I don’t even know what it really is. I’m off to google it.

My biggest achievement…well I still have a ways to go in terms of achievement…but so far I would say that my greatest achievement was when I helped my friend through a very difficult time in her life and she sent me a letter saying that she couldn’t have gotten through it without me. I feel the most accomplished when I feel like I really matter to someone or can really make a difference. Sounds cheesy, but oh well!

We love mesquite, we have been using it for years now and have not gotten tired of it ; )

Hey there – that looks yummy – I adore ‘mushes’ too. Cucumber and mint are such a Mediterranean combination – feels so ‘homelike’ to me. Love the addition of sprouted lentils – I’m away from home for a couple weeks and brought lentils along to sprout – great food.

I don’t know what the hardest thing I’ve ever done is. Probably recovering from anorexia – yes, must be, since it’s still a process.

parenthood = the hardest thing/job ever. most rewarding, but hardest.
physically, had a natural childbirth, have overcome physical health challenges, ran marathons…that’s all fairly easy, physical stuff is easy.
digging down deep to be an amazing parent every day is true work :)

Love mint! Never tried it with cucumber- sounds amazingly refreshing and perfect for summer.

Great questions! I think making the commitment and getting married was both the easiest and hardest thing i’ve ever done. It was easy knowing that Tom was “the one” but it can be hard making a marriage the best it can be. Do you know what I mean… not sure if I’m explaining myself very well! Biggest achievement- going through the first year of marriage and living together whilst studying for an intensive Master’s degree and overcoming my ED all at the same time! :P

Sarah, that is a great achievement. Marriage is a lot of work and studying for Masters degree on top of that is not easy. That is awesome :) Our biggest challenge and achievement is growing our company. We learn so much each day!

Hardest thing: Working on my degree part-time and still trying to stay motivated, especially since I have been away from a university setting the past 2 years.

Easiest thing: Agreeing to marry my husband!

Biggest acocmplishment: Will be graduation, if I ever get there!!!

I’m late answering this but the hardest things I have done (and can think of right now) is running a marathon, moving 8 hrs away from my friends, family, and everyone I knew for an internship after college (which only lasted 10 months because being that far away from EVERYONE sucked, lol), and getting my body and life back after destroying it due to loosing weight and anorexia. No bueno. Much happier now. :)
