Well Lori and I decided we wanted to do something fun for Sundays!
And we came up with….
SOCCA SUNDAYS!
You all know that we love our socca….and we have seen a few of you love it too.
Reasons why we love Socca:
- good source of fiber
- protein
- few ingredients
- easy to make
- taste GREAT
Today’s Socca Sunday we decided to use some of the ingredients we got yesterday at the market.

Today’s recipe features:
Greens!! Arugula, sunflower sprouts, and thai basil
I was so excited to see a local farmer with sunflower sprouts! They are my favorite!
Ever heard of lemon cucumber?
I sure was intrigued, so I got a few yesterday at the market! I love lemon. I love cucumber. So together – YUM! I love it! Although they did not have a strong lemon taste, still mostly tasted like a cucumber to me.
Pure2raw Recipe: Lemon Cucumber Thai Basil Socca
Here is what we did:
- Heat oven to 400.
- Place 1 cup garbanzo bean flour in bowl. *Note: some of you asked if we make our own flour and no we do not. We buy it at our local health food store. One day maybe we will make our own, just do not have time now.
- Pour 1 1/2 cups water with a good pinch of sea salt and whisk together.
- Warm 2 tbsp coconut oil (or your favorite oil) in 10 in circle pan. (Pizza pans work great or cast iron skillets).
- Add 2 lemon cucumbers, skinned and chopped with a handful of thai basil
- Stir together and pour into hot oil in the pan.
- Bake for 40 minutes.
- Instead of flipping the socca, we just broiled it for 2 minutes.
Dinner tonight – socca and salad.
*note salad is not dressed, at the moment, I am taking this picture a little early. I plan to eat salad and socca a little later, but my dressing will be tahini and lemon!

I’ve never seen a lemon cucumber before! That thing is adorable. And I absolutely adore Thai basil – when I took a cooking class last summer in Thailand I picked it fresh off a plant to incorporate, holy cow. As for Socca Sundays, I’m basically obsessed with socca right now (thanks to you two, obviously), so I am *so in* for this one. I’ve been having so much fun changing up the flavor profiles of it!

Okay, how cool is it that I have thai basil and lemon cucmbers growing in my garden right now? I can’t make this just yet, but it is bookmarked for future reference (like when the cukes get out of hand).

Nope, I’ve never heard of a lemon cucumber. Maybe it’s called that because it is shaped kind of like a lemon and not due to taste? I also love those two flavours…I have lemon water every day and sometimes I add cucumber to the mix. Very refreshing.
