Roasted peppers at market and our grub

by Lori and Michelle on August 30, 2010

Happy Monday friends!

So happy to that everyone has been enjoying our almond butter fig socca

aug tc 2010 1208 Delicious! I am craving it again ;) Promise it is mouth watering good!!!

Michelle and I did great at our weekend farmers markets!!!! Thanks again to all our customers who come out each week to support our bakery!!!

Some new items we had at the market:

aug tc 2010 1044 Mixed berry crumb muffin

aug tc 2010 1045 Cinnamon sugar coffee cake

aug tc 2010 1046

Now who has fresh roasted peppers at their farmers market?

I do!!

aug tc 2010 1048

The farmer next to me roasted peppers for his clients! It is pretty cool!

Does anyone have any unique things at their farmers markets? What is your favorite thing about farmers markets?

After unloading the cars and doing some cleaning Michelle and I usually whip up a green smoothie when we get back from the markets! We are both so thirsty and hungry that a green smoothie usually fixes both cravings ;)

Dinner was roasted sweet potatoes and broccoli.

Our dessert Saturday night was our layered coconut bar

aug tc 2010 1117Sunday we enjoyed our fig almond butter socca for a brunch!

Our workout:

40 minute walk outside (it was so pretty out) plus some strength training exercises. It felt nice to get outside for our workout… I think fall is just around the corner! :)

A little bit later we made a new version of our avocado pudding.

aug tc 2010 1241Avocado, lemon, sunflower lecithin, stevia, dandelion greens, cucumber, cilantro, hemp seeds, and cacao nibs

Glorious. I really enjoyed this avocado pudding. It was not too sweet and and had great flavor!

Then I was craving something for dinner and this hit the spot ;)

aug tc 2010 1264 Roasted kabocha squash, garlic, and onions, on top of chopped romaine and fresh basil!

aug tc 2010 1259Not only did this dinner satisfy my cravings…. it was simple. Just the way I like my meals!

Dessert was a new dessert we played around with and sold at our weekend markets to get people’s feedback.

aug tc 2010 1281We call it our S&S bar because it is a sweet and savory dessert. Overall we are pleased with it, but might change just a few things ;)

Well that is just some of our grub that we had this weekend. What was some of your favorite meals or snacks or desserts?

Stayed tuned we will be back later with another great recipe!

Ohhh that layered coconut bar looks fantastic!! And I love the idea of avocado pudding. I can’t get enough avocados lately, so I feel like that would be a fun new way to eat them!!

Hope you ladies have a wonderful start to your week!

Can I make your same socca recipe with quinoa flour? I can’t have garbonzos. I want to make this fig and almond butter socca so bad- it looks so good!

Teresa, I am not sure how quinoa flour would work, but I say go for it and give it a try. Or if there is any other ‘bean’ you could have – you could try that. I guess I need to start playing around with other flours to see how it would do.

Sounds like you have an awesome Farmer’s Market! I was in Kansas all week and got to enjoy some AMAZING home-grown heirloom tomatoes from my friend’s farm… I miss them already!

Besides those tomatoes, the best thing I ate all weekend was wedding cake!! I’m suffering from a bit of a sugar-hangover, but it was totally worth it. ;)
