Beet hummus

Today we got a great easy recipe for you all for this Recipe Friday.

Lori and I have been enjoying a lot of zucchini hummus lately ;)

The other day we had some extra beets on hand so we threw them in our good friend.. the Vita-mix…viola!

Seriously we enjoyed this hummus all last week. We tend to keep our sauces and dressings really simple so this was perfect!

Sliced cucumbers, beet hummus, and wilted greens with some hummus mixed in.

Delicious!!! Topped our veggie hummus mix with some dulse flakes

Another snack was some of our raw savory kale crackers with beet hummus.

Raw veggies (cucumber and beets) again topped with a lot of beet hummus.

Can you tell we enjoyed this easy and simple hummus all week long!!!

Wish me luck at the event tomorrow. I am getting nervous!

Heathy – we had zucchini and beets on hand that we got from a farmer, so we threw them together ; )

Don’t get nervous…you will do great! You know your products and that is the most important part! Good luck and I can’t wait to hear about it! I was really bummed it was full. Since my husband was diagnosed with celiac and my grandmother, I am always wanting to learn more about the products out there for them! Have a great weekend!

Oh and your hummus looks so pretty! Pink is the perfect feel good color for us girls!

I’ve made beet hummus using chickpeas, but never zucchini….but remember I just said I needed zucchini recipe ideas? You were holding out on me! ;)

So creative, I never would have thought to make beet hummus. And just today I was thinking what to do with my extra beets, haha.

Whew, I’m just getting caught up on old posts and you girls have had a great week! I really loved your post on under/over eating. I still struggle with both, and you guys really reminded me to be mindful of what I’m eating and listen to my body! I love the pretty color of this hummus. Fartygirl – you do not like beets?? haha we love them, but the hummus does not taste like beets, well to us ; )

Love this recipe! I would be loving this, beets are so yum, and I love the color too! I was thinking that when I saw it, and then saw as I was scrolling down and reading more, you wrote that too! The color is so pretty!

Beet hummus looks too pretty to even eat…well, almost :)

Your comment to me about the $5 worth of kombucha..yes girl!!! OMG I get the craziest thing. Like, could I made a half dozen raw dessert balls (i can’t even cook in that small of a quantity, my Vita blades dont even get the food blended at the bottom of the canister) anyway and mail them like 6 balls for 3 bucks. Yeah, sure, lemme get right on that LOL

KJ – YAY!!! So glad everyone liked it!! Yes perhaps different beets, we had Bull’s eye beet, so it was red and white inside!

The hummus looks great- love the pink color, too. Beets, why not?! Hummus is one of those truly versatile things, you can add anything… but beets is a new one for me. Love it!

I just made this and wanted to leave a comment. It did not taste good to me at all. I used the Artisana tahini just as directed. It was way too bitter. I think less tahini would have been better. I had to add 3/4 tsp sea salt and two tablespoons of lemon juice in addition to all the above ingredients. It is now palatable but still bitter. I plan to make the sprout burgers next so I hope it turns out in the end. also if you add garlic add either half a clove or a small piece. I used one large piece and it is too much and actually spicy on the tongue… and I am a garlic lover…

Kristine – sorry it was not too you liking. Everyone has different palates, but glad you found out what works for you. Cooking the beets might be a better option, they will naturally sweeten it :) Also, if you are new to sprouted lentils, you may find them to be a bit bitter too then, so when making the burgers may need to up the sweetness. Or cook the sprouted lentils will also help with the taste. Hope this helps. Again sorry.

thanks for the response! I was dissapointed at the taste and quickly realized I would have to make a some changes for next time. I think the tahini w/ the sprouts was just a taste that is too bitter for me. I am new to sprouting so I will try your suggestions for the future. After all my work, even though I didnt like it much, I still ate it haha.. I mixed it with lots of greens and made a wrap which spread out the bitter flavor and made it better for me. I cant see throwing out all those good healthy ingrediants so I tried to make the best of it :) thanks

I guess we like bitter food, haha :) I just never heard someone describe tahini as bitter, sprouts I can understand. But plain tahini does have a boring taste to me, but I still love it! We hate to throw ingredients away too, there has been times when we make other people’s recipes and did not like the outcome, but always find a way to save it. Just the luck of the drawl.
