Gluten Free Pizza + Chocolate

by Lori and Michelle on August 5, 2010

Good evening friends,

Michelle and I are running around like mad women crazy today ;) I am doing a gluten free expo in Charlotte this Saturday, while Michelle is going to stay here and do one of our Saturday markets. And the expo is expecting over 450 people! So let’s just say we are planning on getting no sleep these next few days.

Our workout today was 20 minutes of walking plus 15 minutes of high intensity calisthenics followed by 10 minutes of yoga! Felt great!

Our breakfast was a delicious smoothie.

july tc 2010 333 Local baby chard, frozen local peaches, granny smith apples, lemon juice, hemp seeds, and sunflower lecithin.

july tc 2010 336Creamy and delicious just the way I like them ;)

On a side note: we added some new dry mixes to our online store (pizza and pretzels) both are easy to make and freeze well.

Earlier this week Michelle’s best  friend was here for a business trip and he loves our pizza!! Therefore Michelle made our Twin Cakes Bakery gluten free vegan yeast free pizza crust.

july blog 2010 1166May I present you with our yummy allergy friendly pizza that is full of flavor! And taste just like the real thing ;)

july blog 2010 1167We topped our pizza with a basic gluten free tomato sauce and DAIYA cheese!! We love this cheese!!

july blog 2010 1170PURE HEAVEN! Wow this was a real treat for Michelle and I. We typically do not eat pizza that often but it sure is nice to enjoy every once in awhile. Nothing beats good pizza and good company :)

july blog 2010 1175Michelle eyeing enjoying her slice of pizza!

As I mentioned we are getting things ready for the expo this weekend and farmers markets, as well as keeping up with online orders!

We have been making lots of our yummy snack bites

july tc 2010 399 Vanilla kreme bites before going into the dehydrator.

july tc 2010 403One dehydrator full of snack bites, flatbreads and crust of our cranberry layered coconut bar.

july tc 2010 424Made four rounds of our fudgy chocolaty brownie bites… and a round for us to enjoy ;) These are sooo good straight from the dehydrator because they are a little warm and taste just like ‘baked’ brownies ;)

Now if you follow us on twitter you would have seen our tweet about us making a mistake with creating a chocolate dessert but realized we might have created a whole new recipe for unbaked Hershey kisses

july tc 2010 429Now the look of these cute little guys still needs some work but the flavor and texture are to die for :)

Ok back to business.. enough chocolate and pizza talk ;)

Time to finish packing and getting ready for my gluten free event in Charlotte.

What is your favorite type of pizza? Deep dish or thin crust? Lots of tomato sauce or little sauce? Lots of toppings or plain?

Till next time,

Lori

the two things I want most in the world right now – pizza and chocolate! love it!
I’m a New York City pizza girl for life – and since going vegan it’s the only thing I occasionally really miss, especially when I walk by my old favorite pizza place and smell it! But no problem. I guess I might have to order from you guys!

Lori you so funny, thanks girl!!! I like thick crust pizza so I guess I am more of a deep dish person too ;)

Ela August 5, 2010 at 5:11 pm

Wow – good luck! What a super-busy few days you have.

Thanks for making food so much fun, and yet so ‘friendly.’ I’ve never really eaten much pizza (probably prefer a thin crust though) but that pizza looked beautiful – and non dairy cheese too!

Thanks again

Thanks Ela! We do have fun making all these food, sometimes a little too much fun, haha.

I almost never eat pizza either, but I do LOVE it! I really like hand-tossed “New York style” pizza crust– not too thick, but not too thin. I’ll eat pretty much any veggie pizza, but one of my favorite combos is garlic, green peppers and feta! Sooo good!

I’m so excited about the idea of healthy Hershey kisses– hope you guys share the recipe! :D

Good luck at the show! I wish I could go! I am a thin crust lover with loads of veggies! I never much cared for the cheese part, but Daiya is mighty tasty!

Wiping the drool from my chin. I must make chocolate kisses, and I don’t care what they look like!

Your pizza looks amazing! I’ve never had “real” pizza because I’ve been lactose intolerant since I was old enough to chew, but I’ve tried some cheeseless pizzas before and a few with rice cheese. They were okay, but never really my favourite thing…and since eliminating gluten I thought I would never eat anything pizza-esque again anyway. Clearly, you have come up with a great alternative though. I would love to try your version.
And that chocolate…wow. I really think that some of the greatest things are discovered when we make “mistakes”.
Good luck at the gluten free event!

Thanks Lauren, we never really thought we would have pizza again either. We are so happy to have create a good pizza crust that is free from all the major allergens. Now we can eat pizza and not have any problems :)

Sarah (GF vegan) August 6, 2010 at 2:23 am

I’m yet to find or make a gluten-free, vegan pizza and oh how I miss pizza! I rarely crave anything that isn’t gluten-free or vegan but pizza I crave most often. So, I think i’d be happy with any topping :)

Sarah, yeah we typically do not really crave anything but when making the pizza for our friend it was hard not to take a slice ;) It was a slice treat.

rebekah (clarity in creation.) August 6, 2010 at 2:40 am

good luck at your expo and market! they’ll love you – and how could they not with pizza and chocolate?

and great job on the crust – i’ve been working on a good gf crust recipe for probably 8 or 9 years now. i do ok, but not heavenly yet. i keep trying!

Averie (LoveVeggiesAndYoga) August 6, 2010 at 4:13 am

i love my pizza crust super thin and extra crispy, tons of tomato sauce and TONS of pineapple and hot pepper flakes. Weird combos but for me, that = pizza. Anything else is just…meh. I want/need to try your crust recipe!

Pure2 August 6, 2010 at 6:57 am

Oh Averie you are too funny. That is not a weird combo! Sounds great.

Megan @ The Oatmeal Diaries August 6, 2010 at 6:43 am
