Time to start building our lasagna.

First layer we used zucchini topped with lime almond ricotta spread

A healthy, light, in season, full of flavor and vitamins, easy to digest, low calorie summer lasagna. And best of all it does not take hours to make nor do you not have to stand in a hot kitchen!

Now you might be thinking this will take a long time to make! Well it does not. If you already have the two sauces made up the day before putting this dish together is fast. We used our mandoline to cut the cucumbers and zucchini into thin layers, or you may hand slice them too.

Treat yourself to a simple, easy, healthy lasagna for dinner one night!

aug tc 2010 567Enjoy!

Till next time,

Pure2Raw Twins

Thanks Sarena, we love our fresh basil. We have been enjoying it a lot lately! YUMMMM

Just GORGEOUS! And you could really do so many variations depending on the hummus or the herb/spices. I’m thinking a Mexican lasagna with cilantro and a jalepeno hummus!

Mama Pea – oh yes, that sounds amazing.

Oh, that looks and sounds so light and delicious! I have lots of mint in the garden right now – am looking forward to trying.

Hope you got through that crazy to do list and can have some rest as well as everything else this w/e!
love

The lasange looks great. Could you use a different type of pepper instead of the banana pepper though in the Almond Ricotta?

Little Bookworm – yes you can used whatever pepper you like, we just happen to have banana peppers on hand, plus we do not really like peppers, especially hot peppers. : )
