Hey everyone,
I had a great day at the farmers market yesterday! The weather was perfect…not too hot, a little breezy! It was one of those days I could have just fallen asleep under a tree ; )
I had my usual breakfast before heading out the door for my market
Avocado pudding with cacao nibs! Seriously could have this everyday…oh wait I do ; )
My highlight was last night’s dinner! I created something simple that turned out to be amazing. Also, enjoyed my dinner with a glass of white wine, shhh don’t tell anyone ![]()
Michelle’s 4 ingredient dinner:
- squash, I used a delicate (it is yellow with green stripes)
- coconut oil
- allspice
- fresh basil
I simply roasted up some delicate squash I got from a farmer, rubbed a little coconut oil on the slices, and roasted it for about 20 minutes in a 350 degree oven.
Dusted it with some allspice when I took it out of the oven
Delicious. Check.
Happy tummy. Check.
Happy Michelle. Check.
And then I was craving a little something sweet, so I enjoyed some gluten-free vegan chocolate chip cookies, courtesy of Twin Cakes.
Sorry for the bad picture, I started gobbling down enjoying my cookies. I could have eaten 10 more….love chocolate chip cookies!!
A great night! I enjoyed my night off!
Now onto another highlight for me….my breakfast this morning!
If you follow Lori and I on Twitter, you would have seen me tweet about trying something new for breakfast.
Hey looks like Lori had the same idea, copy cat….haha…no we do not talk about food to each other <grin>
Yes I felt like a warm breakfast.
You know one that just warms the soul ; )
I entered the kitchen this morning.
Pushed aside my Vita-mix. Please do not hate I will use you later. Turned my oven on.
Warmed my coconut oil in the pan.
Made my socca batter, which I added 1 tsp cinnamon, 1/2 tsp ground ginger, 1/2 tsp cardamon to spice it up some!
Poured my batter into the hot oil.
And just let it baked.
While my socca baked I snacked on this.
I think I might have put too much oil down in the pan, because my socca was getting too crispy, which was not exactly what I was going for….anyways my socca lost the battle with the pan.
It is okay…I will make it work!
I cut my socca in half and then sliced it up.
Stacked it high!
Poured myself a cup of coffee.
WAIT a second…COFFEE??? I thought you do not drink coffee…I do! I confess!
It is not an everyday thing, just something I enjoy every now and then because I just love it.
Plus remember I wanted a soul warming breakfast ; )
I present you my breakfast…correction the PERFECT BREAKFAST!
Love maple syrup! Again, something I enjoy every once in a while. It is a nice treat for me.
All I wanted was a simple, hearty breakfast. Plus, for me maple syrup is what makes a pancake a pancake, you know?
I enjoyed every sugary bite!
And I savored every sip of coffee!

I think we all have little moments like I had where we just enjoy something that is a true treat.
I LOVE pancakes…something I truly miss. I would eat so many pancakes when I was younger….I would eat till I was sick, haha. And for me having this delicious soul warming, sugary filled, caffeine over load meal is a treat! Something I truly enjoy eating….without guilt!! And for me that is what it is all about.. enjoying your meal that you just made with pride and happiness!
I really liked my socca on the sweet side today, something I will have to make again!
So far my weekend has been great!! Now time to prep for some online orders.

This makes me kind of sad. I can’t believe you eat a microscopic stack of thin pancakes and call it a decadent treat. EAT SOME MORE FOOD!
I’m glad you’re happy and satisfied with that though. It just makes me feel guilty for eating an actual plateful of food, and I’m not sure I should feel guilty about that — let alone should you be asking readers to not “judge” you for eating a plate-bare stack of healthy “pancakes,” then asking if they believe this is “ok” to eat… that worries me…
Brooke – thank you for your concern, and you must be new to our blog because you do not understand my post. I never asked anyone if this was okay for me to eat, I eat this all the time. What I was referring to was the sugar in the maple syrup, because if you follow our blog you would see that we are sensitive to sugar. So I believe I am allowed to say this is a treat. Not the socca, because again I eat this all the time. It is the sugar I am more concerned with here. And in terms of judging me, I was not being serious. I was just playing around so to speak. And no offensive, but here you are judging me off this one post of mine. If you look around my blog, I eat! I eat a lot, and have had past issues with food, so please do not make fun of my treat.
I do love pancakes, though I don’t think I go as crazy about them as some people do. I like mine with a mixture of maple syrup and blueberry compote :]
I think I have so many “treat” foods that I don’t even categorize them as treats…hehe.

Breakfast socca! So yummy!!! This breakfast looks great and you have a great attitude about it. Sometimes we just want a treat and that’s okay. No guilt! And socca with maple syrup is hardly anything bad. Actually I may have to make that right now. Really craving something sweet!! I love maple syrup on pancakes. Pancakes are definitely a treat for me. Lately I’ve been having maple syrup on oat bran. I think I’m just on a maple syrup kick.
I, of course, feel like little treats are okay!! A treat here or there is what keeps me eating the way I do the majority of the time. I enjoy every second of it, too!

2 things on my list to make, thanks to your inspiration: Socca and avocado pudding! I’ve had the pudding, but not Socca!!! Gotta make it! And don’t pay attention to anything negative, I always ignore that kinda talk on my blog!

I understand, sometimes you just have to eat something that reminds you of childhood, I do that too, and just like you I make a healthier version. Don’t you hate it when people don’t get it? I think you are very brave to put it out there on the internet.I need to try this socca, never heard of it.

I love the idea of turning Socca into PANCAKES! Genius!
Oddly enough, eating pancakes is kind of a new thing for me! My dad used to make me waffles or french toast on the weekend, so I always preferred those over pancakes! But a few months ago I discovered the BEST pancakes I’ve ever had at a local restaurant, and now I can’t get enough of them! I like my pancakes kinda thick, with a CRISPY outside, and a soft inside. And I love dunking them into pure maple syrup! (the “imitation” syrup is gross, though!) Another weird thing I like to do is add a dash of salt on top! I love salt, and even though I know it’s bad for me, the salt kinda imitates how butter tastes on pancakes!
I want to try out your avocado pudding – it looks so creamy and delicious!
Inspired breakfasts! Love it. I’m trying to cut back on coffee- I was only having one a day but it was every day and out of habit rather than out of desire. So, I’m trying to have coffee only when I want it and will enjoy it, rather than for the sake of it
Btw, I tried Kale in a green smoothie and it def worked! Woo woo.

Thanks for the honest post!! As you know, I just posted yesterday about being honest…everything from tanning beds to splenda. WHO CARES?!! And for the record,I hardly think maple syrup and coffee is some huge decadent “splurge”. I drink tons of coffee every day, another “confession” but I have gotten to the point that if I didnt have a blog, I wouldnt even view it as a confession; rather just as a part of life. But b/c we blog, we feel the need to “justify” every last thing we ingest which is one thing i dont like about blogging and i try to change it on my own blog and not apologize but if I dont put up 17 disclaimers, i get tons of mail about my choices. So yeah, enjoy your food, and just savor it, “treat” or not, it’s just food
Averie – I agree somethings are just part of my life, but yes why do we feel we have to justify everything we do, eat, etc. I guess some people just think we are perfect, and are shocked when they see we do things or eat things they made not me “right” in their eyes or something.
Glad you enjoyed your breakfast! I LOVE socca! Chickpea flour is definitely my new friend. While I am also a huge fan of pancakes (with loads of fruit toppings and syrup), I have recently fallen in love with all that is waffles! Have you tried chickpea flour waffles? I was surprised how well is goes in a sweet waffle. I also love savory waffles with it (loaded with herbs). I hope you both have a great day! Glad the farmer’s market went well!

Pancakes are ok, but I love big giant fluffy waffles… haven’t had either in so long, but yum, they are good!
Love your breakfast and the coffee. I love coffee too, and lately have been drinking it. How quickly we get addicted to the caffeine, which is why I try not to drink it. But again, once in a while is fine.

I have to first of all apologize for being kinda harsh with my comment, because it was really a knee-jerk reaction — as most comments like that are — to the strong feelings of guilt tied to my own ideas of a “hearty” breakfast. It took me about 2 minutes to post that comment, and I do hope you take that and all comments like it with a grain of salt. I really wish I hadn’t started off the comment thread that way because the truth is that I’m really enjoying the blog and am super excited to try some of the recipes.
That said, I /am/ a new reader, but I did go back and read your bios so I understand a little bit about where you’re coming from. This in no way gives me the right to make any sweeping generalizations about what is right for YOU to eat — that is absolutely right. The thing is that you are in a very difficult position as a health food blogger. I should never have told you to eat more food — it is very clear that you feel your best eating this way. The more I think about it and attempt to clarify my initial gut reaction, I feel not so much concerned with your health personally, but with the reactions of other new readers like me, or younger more impressionable girls struggling with body issues and looking to vegan/raw diets to lose weight. The format of a blog means that readers /are/ going to see posts in isolation. Even though I am a new reader, everything individual post you make is legitimately subject to scrutiny out of context too.
Your language in your post is very wink-wink-nudge-nudge, and I realize that you didn’t mean things like “don’t judge me” literally, but the underlying tone was as though you were treating yourself to a big splurge. As someone struggling with body and eating issues, trying to enjoy my food and figure out what portion sizes are appropriate for my body, seeing your small (but really so delicious looking) stack of socca made me feel guilty (feelings that are MY issue, NOT yours for posting this…) about the hearty vegan pancakes I had just made for myself in the first time in about a year. As I am searching for the answers to understanding my own body, and as I don’t have the money to go to a nutritionist, I’m in the same position as a lot of young women — trying to find whatever information I can online as to what portion sizes are appropriate for people generally. It is almost impossible to get an accurate or helpful idea of proper portion sizes by scouring blogs, but I can guarantee you that lots of young dieting girls are doing it and subconsciously indexing ideas of what portion sizes make sense. Justifying eating tiny portions — which for /some/ people may be undereating — is easier when you see a healthy, thriving person eating tiny portions. When you blog about a version of pancakes that is pretty darn healthy compared to S.A.D. pancakes (which is the diet most Americans, and therefore potential new blog readers, are living on) and repeatedly call it a “treat,” there are two issues that arise for new visitors to your blog. One, some are immediately turned off to health food if this is what constitutes a “treat.” (This isn’t a problem for you, necessarily, but it’s just one thing I notice and try to deal with in trying to change loved ones’ minds about healthy food.) Two, there are going to be another portion of (young) readers who will see your photos, read what you’ve written, and unconsciously process this photo as the idea of a proper portion size for /everyone/ without necessarily understanding the idea of nutrition for the individual. Reading about this as a “hearty treat” might very well give way for the young, uninformed, decontextualized reader to associate feelings of guilt with heartier breakfasts like the one I had and started to feel guilty about, and begin the cycle of over-restriction that is so detrimental to our health and psychological well-being. Not that you are responsible for other peoples’ reactions, but you do and will continue to have an effect on all your readers with every nuance in your writing tone and every photo. I think the question that got me was “Do you feel it is okay for little treats like this?” The answer is OF COURSE, without a doubt!
You’re in a super difficult position, and I respect your work on this blog. As a blog writer you /are/ accountable for everything you write, and sometimes you /do/ have to defend it, because it is out for all the world to see. But like I said initially, please take dumb knee-jerk comments like mine with a grain of salt — I overreacted, but I’m grateful for the opportunity to dialogue with you a little about this.
Brooke, thank you for comment and bringing this to my attention. I am grateful for your understanding and concern. I guess I need to be a little more careful with my wording as you say the treat was the maple syrup since I do not handle sugar well. I love all my readers new and regular ones, and I do not want to scare people away from healthy foods especially vegan and raw foods! I hope to inspire others to give healthy foods a try. I agree everyone’s portion size is different because everyone’s body and health issues are different. I too have struggled with body image and food portions and eating a vegan raw diet as REALLY HELPED!! I love the food I eat and I feel great. I hope to continue to show that on the blog and help others who may be going through the same thing. I really do appreciate you taking the time to write this comment and bring this to my attention. I am glad you did because it has me really thinking about my post now and how I word things because I know people are judging me even if they do not mean to be. You actually inspired me to try making a sweet socca in my waffle maker, before I ever read the comments! I added a little coconut sugar, cinnamon, and currants, and drizzled it with cinnamon-maple syrup
I actually love having socca for breakfast, since I like to let the batter sit overnight.
