Hello friends,
Michelle and I had a great very RELAXING weekend where we took time away from the computer! Our parents are in town so we have been spending time with them.
Here are pictures of some of our eats lately
Roasted veggies with more of our zucchini based basil sauce, fresh rosemary and black sesame seeds.
DELICIOUS!!! I am really enjoying my simple veggies dishes for dinner lately!
Also yesterday Michelle and I treated our parents to socca!! In honor of our socca Sunday tradition!
We made ours a little on the savory side with fresh local basil and tomatoes!
I am starting to really enjoy fresh tomatoes from all my farmers. This tomato here was called a Pink Lady. It was delicious.
Have you ever had a Pink Lady Tomato before?
It is funny how I am craving tomatoes when I am not a huge fan of them. By having fresh local tomatoes makes a BIG difference in the overall taste! The tomatoes you see in the stores are nothing like local tomatoes… in my opinion

And we made some of our gluten free vegan donuts for the parents! They loved them. They could not believe that this donut was actually ‘healthy’

And we have been enjoying our famous banana chip bars with the folks…

I hope everyone had a wonderful and relaxing weekend like I did! It was great to catch up with our parents, but we have some issues that will be taking some of our time here soon. So we are not sure how much computer time we will be having.

Sounds like you had a good time with your family! I don’t live near my family, but I do get to visit often enough because of my job! (definite perk!!) I’m actually traveling right now, and staying with my mom!
My brother lives in another state, and I miss seeing his kids grow up! I wish I got to see them more often, too!
Totally agree about the tomatoes, too– local tomatoes taste SO MUCH better than traditional “store” tomatoes! I can only enjoy tomatoes “in season” and after that, they have no flavor!!

The best thing I ate this weekend was a sweet potato with cinn. This may sound silly, but I never enjoyed them until recently. Now that I have cut out all meat and dairy (okay 98% of dairy) I am finding that I enjoy many veggies that I did not like before!
It tasted like Fall!
To visit my family, it is a two hour drive one way. So, we try and see them every 6 weeks or so. Sometimes it is longer depending on my husbands work schedule and my school schedule. It is hard when my husbands family stops by or we see them every week (since they live in town). It really makes me miss my family and wish that I could just take a 10 min. drive to see them.

There is really nothing like a fresh local grown tomato! The donuts look delicious! I don’t live close to my family and wish that I did sometimes. They live in Virginia while I live in Georgia so we don’t see each other often at all. Best thing I ate all weekend…my husband make a huge batch of fried rice super heavy on the veggies and we had them in lettuce wraps! I am already thinking about how great the left overs are going to be.
II have been loving the simple veggie dinners and lunches too. Throw on a good sauce, and I am a happy girl. That basil zucchini sauce is intriguing….
I live on the other side of the country from my family, and I miss them every single day. Thats the main reason for my blog. My friends and family at home get to see/hear about what I am up to.
Katie – that is one reason we started our blog too, for our family to keep up with us!
Yummy!!!!! I agree that local toms (or better yet, homegrown) are the best than at the market. We might get a tomato or two from our own garden. Fingers crossed.
Seeing that donut (AMAZING) and the banana chip bar are making me hungrier than I already was!
Hubby made another batch of lentil stew. So good! Maybe I’ll make some socca tonight to go with the leftovers.
No, parents live out of state and my sibs are scattered with the closest one an hour or so away. Visits aren’t that often.
Hubby’s family are a little closer so we spend more time with them.
I made a raw Banoffee pie this weekend for the first time to surprise my husband (he is from Scotland) and it was soooo good! I used the lecithin in the topping – how great is that stuff!? Thanks for always blogging about it!
I do not live near my family, and the hardest thing about being away is the loss – the death of a family member – and not being able to go home as it would cost over $4,000-$7,000 to get a last minute ticket. Second hardest thing is missing the big celebratory moments, such as weddings and births. Third hardest is feeling like no one cares about your anymore – like you have been forgotten, and everyone is living their life and moving on without you.

Everything looks fantastic. Your family must love visiting you for the great company AND amazing eats. My family does not live in the same city as I do but we try to get together at least once a month. I wish they were closer.
Wonderful that you enjoyed a relaxing time with your parents! The way the two of you work, it is well deserved!
Only one family member lives close to us, but I do keep in touch on the phone with other family members, especially Mom
Oh, that first pic reminded me of a meal I used to make quite often and haven’t had in ages: zucchini fettuccine with mango sauce + black sesame seeds. Mmmm, SO good! Why haven’t I had that lately? Must remedy, soon!
I here ya with the tomatoes. There is nothing like fresh, just-picked garden tomatoes! Around these parts, we savor each and every one, knowing that soon all we’ll see in the grocery stores are gross pink ones (NOT Pink Ladies, trust me) that don’t even taste like a tomato. Blah!
I spent years living away from family – not even on the same continent! It was tough. But, I wouldn’t of done it differently. Now, I’m not more than an hour away from anyone in my large Hungarian clan. Nice.

Lauren, not really different from the white sesame seeds. They are similar with a slight different taste. Both are good!
Lucky parents to get some socca. Best thing I ate was some roasted garlic. Mmm.
I don’t see my family that much since they are on the other coast of the US. I miss them and we hope to move closer soon.

I live about 5 minutes from my parents and I honestly see them like every other day – I’m obsessed with my parents – they are my best friends, I don’t know what I’d do without them

I live a _very_ long way from my parents – I live in AK, they live in London, England! I’ve lived in CA, HI and AK for the last 10 years, so I’m pretty used to it, and the rest of my fam’s in Israel, so even more used to it. But I do miss my mom especially.

That roasted veggie salad looks absolutely amazing! I love how colorful it is. I’ve never had a pink lady tomato, but I LOVE pink lady apples. Summer tomatoes fresh from the garden are a complete 180 in taste from the supermarket ones, I agree!
