Unsuccessful socca wrap

Hope everyone had a great time at the Health Living Summit!!!! Wish we were there ; ) It was fun living through it from reading your blogs!

We are!! ; )

Let’s get down to business.

Today’s socca we did:

  • 1 cup garbanzo flour
  • 2 cups water
  • 1 tsp sea salt
  • 1/2 tsp spice blend (cinnamon, fennel, cardamom, anise)
  • 1 tbsp coconut oil (in the batter)
  • 2 tbsp coconut oil in the pan

Stir everything in a bowl using a whisk.

Heat oil in pan at 400 degree oven for about 2 –3 minutes.

Pour socca batter into hot pan and return back into oven for about 40 minutes.

Our toppings:

  • 1 head green lettuce, rinsed
  • 1-2 tbsp hummus, we just used our squash hummus that we have been enjoying all week ; )
  • 1 head of elephant garlic (roasted in olive oil)

We roasted the garlic for the same amount of time we baked the socca.

So today’s plan for socca was to make a wrap out of it. But by putting the coconut oil in the socca batter made the socca really delicate and soft. Therefore making it hard to get out of the pan in order to make a wrap!

We had to come up with another alternative, which turned out amazing!!!

We ended up making a layered salad dish. Simple and so delicious. The highlight of the meal was the roasted garlic!!! Love it!!!!

The socca mixed with the roasted garlic just melted in our mouths ;)

We will try a wrap another time! This dinner was still a great success :)

That socca looks delish, even if it didn’t turn out as a wrap! The layered salad looks fun! I love roasted garlic, too.

That’s what all my wraps end up looking like anyway.

I roast a couple heads of garlic every week. I just snack on them. Kind of a fiend, but roasted garlic is so mild and almost sweet. Definitely melts in your mouth. And it makes everything 100 times better!

when one thing doesnt go as planned in the kitch, that’s where good cooks know how to just go with it and create something else…on the fly…which totally worked!

foodbuzz in San Fran..that would be so fun but a long ways from NC for you two and yeah, woulda shoulda gone to HLS. Next year :)

I looked for chickpea flour at my normal supermarket and couldn’t find it, but it’s definitely on my WF list!! The socca always sounds so good :) I’ve missed you girls this weekend!!

Wow. That looks amazing! Seriously, one of the best looking/sounding dishes ever!!! I LOOOVE roasted garlic- so that makes it a winner dish for me! And socca! Still haven’t had any in forever! I’m GOING to make it tonight- this one with the garlic! Yuuuuummmmmmmmm!

Glad you were still able to enjoy socca Sunday :) Love the spices used in this one! The last picture sure tells the story on how it tasted :)
