Hey again, well we got another yummy recipe for you!!
Lori and I were craving something cheezy the other day, so we revisited one of old recipes, cheezy pepper nacho sauce.
And we came up with…
Cheezy noodles with mixed lettuce!
Ingredients you will need:
Pure2raw Recipe: Beet Cheez sauce
- 1 small orange beet (we had ours raw, but you can roast it)
- 1 medium zucchini, skinned
- 1/4 cup tahini
- 1/4 cup nutritional yeast
- handful of basil
- 1 tbsp apple cider vinegar
- 1-2 tsp sunflower lecithin (optional, it is an emulsifier)
- 1/2 tsp sea salt
Blend in Vitamix till smooth.
If you do not have these ingredients on hand check out these other amazing dairy free cheez sauces.
Next you will need:
- 1 peeled yellow squash
- spiralizer (which we have another great recipe here)
- 1 bag of kelp noodles
*we used the squash and kelp to be our “pasta” noodles, so please feel free to use any pasta or pasta substitute you like
This sauce would also go great over veggies!
Okay time to make pasta.
It is fun…I promise…
Scary…weird…yes, maybe to some…but easy….different…good…yes

Wait, what is that floating so oddly in the water??
Yes kelp noodles our a seaweed, and they look a little odd, have a unique texture to some, but I find if you soak the noodles for a little while it helps with the texture!
Mixing in some squash noodles helps with texture too
Now, I present you our dinner.
Just take your ‘noodles’ and pour cheezy sauce over them and mix around till well coated!

Lori and I devoured this delicious, cheezy living dinner! Fabulous!

Ashley – it took us some before we got a spiralizer, but we just love it. One of our favorite tools to use during the summer. Hope you have a great weekend too!

What a yummy recipe! I love kelp noodles but have only been able to find them occasionally at a store downtown
And every time I make raw zucchini noodles I get digestive distress similar to food poisoning! I have NO clue why.. any ideas??
April – oh gosh, no I have no idea why zucchini noodles give you digestive distress that is not good. I am so sorry, but if I come across anything I will let you know.
I am cah-razy for kelp noodles (I call it Mermaid Pasta), and I love anything spiralized (especially if it came out of my garden).
I trust you’re still standing and have weathered the storm. Looks like Earl lost some steam before he visited the Carolinas, thank goodness.

and my spiralizer…i usually only use it for zukes but, i need to expand that! one time i almost broke it trying to sprialize a really rock hard sweet potato so im scared of breaking it LOL

Ooh, I’m so glad to have found this– I just ordered a BIG box of kelp noodles after trying them at a raw restaurant in Seattle…but now I realize I have no idea what to do with them, ha!
