I have been getting to know the Charlotte area a little better each time I come which is great! After my delicious green smoothie from yesterday morning I did some work and stopped by a local coffee shop to check it out again.

Bold and full of flavor!
My lunch was pureed kabocha squash, more of Justin’s Maple Almond butter, and some of our sauteed veggies. I roasted a kabocha squash then pureed it with 1 packet of maple flavored almond butter. Michelle and I have really like Justin’s almond butter, it has great thick texture and sweet flavor from the maple syrup!
I think this was a match made in heaven….anyone else ever have squash with almond butter?? This meal would be something Heather would enjoy

Random but delicious lunch! I LOVED the almond butter mixed in with the kabocha squash, heavenly! Something I will be making again, but maybe make my own nut/seed butter or one of Gina’a fabulous recipes.
It is funny every time I have roasted kabocha squash I always forget how much I love it
I like to my puree squash in my vita-mix and sometimes leave it a little on the chunky side too!

I had a lot on my mind so I ended up doing about 15 minutes of yoga. I need that mental downtime! After my mini little stretching session I made dinner…. avocado pudding. I told you I have them all the time, haha
Avocado, lemon, stevia, cucumber, arugula, spirulina,sunflower lecithin and topped with yacon syurp (I am obsessed with this sweetener again, so rich in a molasses flavor)
I stayed up late un-packing my things and than to re-pack it all for our journey to the beach. Plus I made food for Gary and I for our travels. Hopefully we do not get much rain from the hurricane that is hitting NC beaches.
What about you… how do you like to puree up your squashes or even potatoes? Do you like them smooth or a little chunky?

I think i have an almond butter addiction. It’s soso good
better than any peanut butter i’ve eaten! also that brownie looks delicious

I like to puree my potatoes and squash where they are still a little chunky. I love almond butter on oatmeal and sweet potatoes! Be careful on your trip! Have fun!

Favorite way to enjoy almond butter? Way too many options to choose from – I can’t decided. I think I prefer my squash a little on the chunky side as well. Love that chew factor, and I bet the kabocha did taste amazing with Justin’s Maple Almond Butter. Sounds like a match made in heaven to me…especially when eaten straight from the jar!

I bring my giant green smoothies in all sorts of glass jars to work and people think it’s weird. Well, I’m a REALLY healthy weirdo. And I’m ok with that.
