Re-cap of Weekend at the beach

Hello friends,

I hope everyone is having a wonderful weekend and Labor Day! Gary and I just got back a little bit ago from our travels to the beach. Luckily we were not touched by the hurricane and had perfect beach weather ;)

Friday before we hit the road I went ahead and made me some food for the road trip and my stay at the beach.

Packed the car up and picked Gary up from work and we hit the road.

Avocado pudding! Perfect travel dinner for me easy on the tummy and taste amazing!

Gary’s dinner was rice and veggies that I made him (sorry forgot to take a picture)

Other food that I enjoyed over the weekend was green smoothies for breakfast along with these great eats

Lots of socca

I made a kabocha squash kale spread to go with my socca!

Made some sauteed veggies

zucchini, beets, cilantro, coriander seeds mixed with tahini

YUMMMM

Enjoyed some sweet potato fries with a ‘secret’ coating, we will share later.

Out of this world delicious!!!! Plan on making these more often ;)

Brownie bites, my all time favorite and love! A little piece of heaven each bite :)

All in all it was a great mini vacation!

I did manage to play some tennis and go a few walks while down at the beach. It was beautiful weather and I had to get my vitamin-D ;)

I am thinking I see hemp seeds on those sweet potatoes! Everything looks so good! You two are adorable. I am so glad you had a good weekend. I am all of those things…beach, mountain and city person. I love them all for different reasons! Have a great evening and enjoy the rest of your holiday!

Cute pictures!!! Did that avocado pudding really fill you up enough for dinner??? i can’t believe it. you guys. altho – i know what it’s like when you’re stuck in the car for a while. The LAST thing you wanna do is eat a big meal.

When it comes to being beach/mountain/city – I’m transitional. This year I got to do the beach and the city in two consecutive days and I actually enjoyed the city more. Weird, and not like me at all! Of the three, mountains is the best though. My allergies go away in the chilly altitude and I love that exercise is part of the whole experience – hiking and whatnot. Those other places, you still have to create a situation that lets you exercise. Not much else to do in the mountains BUT hike and check out pretty nature.

Love your veggie eats. Lookin forward to hearing more about those fries!!!

Fartygirl, thanks! Yes the avocado puddings really fill me up, I put a lot of goodies ;) in there and one whole avocado, and it works as a perfect meal of me! Michelle and I love them! They work great for our tummies! :)

beautiful beach! did you get a little cabin to stay at? must have been nice so you could cook and un-cook. :-)

i love the beach if it’s not too crowded. i like seattle because we have city, mountains, and beach all in one place. it’s perfect.

I am a countryside person. I always thought that I was a city person, but right now I feel so stressed out living in the city -I think as I am getting older, I am wanting a more slow-paced life style (which also probably goes along with having chronic ill health and anxiety problems – wanting a slower paced external environment to heal the internal terrain!). The beaches here in Thailand are perhaps the most beautiful that I have seen, although I also like the Scottish mountains and countryside.

I need to try those avocado puddings. They seem nice and big too (i.e. fills up a nice sized jar). I love seeing what you pack when you travel. Great inspiration. Did you stay somwehre without a kitchen that had a fridge? I was also curious about teh smoothies – I usually make a morning smoothie the night before, but I am afraid of letting my smooothies sit more than 12 hours before having them. Here it looks like you were able to successfully bring smoothies for a couple days of the weekend. Ia m wondering if maybe sunflower lecithin keeps them in good shape (i.e. do not separate etc?). Sorry for all the questions.

Valerie – I was staying at a house, so yes I had access to a fridge. I do think it is best to keep smoothies cool, a cooler would be fine for a few hours. As for the sunflower lecithin, yes it helps emulsify everything, but we also love it for the light texture it provides. Let me know if this answers your questions.

what a great weekend! and your hair in the pic of you and gary, gorgeous, as are you…but ive said it before, both you girls have GREAT hair!!

i am a beach girl, a summer time weather girl, and before skylar, i could and did spend hours at a time, just sitting there, or a gentle walk. the ocean, sand, and expansiveness of beaches is what i love!

Looking forward to the sweet potato recipe! we’ve been growing some in our garden, but haven’t pulled them up yet…

i am a mountain person i think, but then English beaches can be wonderful when it’s not peak season. but maybe i’m a lake and forest person (can that be a new category?) as i prefer lakes and trees to anything!

The veggies + tahini mix looks so good. I need to remember that!! I’m glad you had a good time at the beach- this is one of the first Labor days in my life that hasn’t been at the shore, and it’s made me a little sad!! I’m a little bit of all three- I love my city, but it’s nice to enjoy nature or a day at the beach every once in awhile!

So inspiring how you take care of yourself – it’s a beautiful privilege to pack all that beautiful food and share and enjoy it!

It’s good to see the avo pudding in a pint jar – I’m usually too coy to make that much for myself, and then hungry later! Better to make a good amount with lots of goodies.

you are such a cute couple too!

I live on the edge of a bluff, looking out over a mountainous bay, but our cabin is just inside the town limits, so I guess we have all three sort of. Not urban at all, though – back of beyond, end of the road! I’m definitely not a town person, although I do love culture and depend on some things that town has to offer.
