Apple Pie Parfaits

It is no secret that we love apples, we have them everyday, but every once in awhile we get a little crazy.

DSC_0023 Over Thanksgiving we revisited our first raw apple pie stack and made some upgrades!

DSC_0034 Pure2raw recipe: Apple Pie Parfaits (gluten-free, vegan, soy-free, raw)

Ingredients:

Apple pie layer

  • 4 apples (we used medium-small sized granny smith
  • 8-9 dates, pitted
  • 2 tsp vanilla
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 tbsp raw agave (or maple syrup)

Creme layer:

We have done a few here on the blog, we tend to follow one but not always the exact same way. It just depends what mood we are in and what we have on hand. This is one thing we love about raw recipes, you can play around with the ingredients!!

Directions:

Lightly chopped up apples into wedges. Place all apple pie layer ingredients into food processor and pulse till combined, want apples in smaller pieces (not applesauce texture, haha).

Place all ingredients for creme layer into vita-mix blender and blend till smooth. Or again use any whipped creme of your choice. You could easily just do cashew butter or coconut butter whipped some agave or maple syrup! Or maybe your favorite ice cream.

I cannot even begin to tell you how good this was…flavorful, simple, and guilt-free ;) We jazzed up the recipe to make it look more elegant for our guest!

Twins Self Thought for the Day: Relaxation…allow yourself to be lazy from time to time…it’s okay to ‘do’ nothing.

During this time of the year we can all get a little stressed out and feel a bit strained. Remember to take a break and enjoy the present moment!! Our minds and bodies need relaxation to rest and fuel ourselves for the obstacles we face in every day life. Rest can be just as important as doing!

I know we plan to do some relaxation over the holidays with good food and family and friends ;)

OMG, those Apple pie parfaits look so delicious! I’ve been craving sugar lately and I have all the ingredients at hand. I’ll let you know how they turned out.
RElaxation…very important. Specially when you have a 4 yr. old toddler. It’s good to relax every once in a while so you can recharge and keep going.

These look great!!! I make a nobake vegan apple crumble. I call it raw but its not tech raw b/c it uses oats…and brown sugar :) but it’s no bake and easy and i LOVE it. People who like apple crumbles would love your parfaits! I find that most readers gloss over things that arent chocolate though…sadly…:)

Anyway I featured your smores today. I still really want to make them!

MY favorite chef instructor when I was in culinary school told me, “the best dishes are the simplest ones. Good food doesn’t need to be messed with!”. Its so true! When the semester starts, I am SO doing this recipe for the desserts class I teach in elementary schools!

This sounds AMAZING, especially the whipped cream part. Drool. Is it just me, or are dairy free nut based whipped creams ten times better than the original stuff??
