Back to school

Well Lori and I have a lot to share with you all.

First, both of us want to go back to school. Not for another degree or anything just more education. We love learning new things!!

Last night I headed to UNC Charlotte for an information session on a basic web design program. I have always been interested in web design and things web related, one reason I love blogging and plus run an online bakery! I want to know more…I want to feel more comfortable with changing things or updating this or that, and best of all

I CAN HOPEFULLY HELP ALL OF MY BLOGGING FRIENDS!!!!! YAY :)

I am really excited for this class, but  nervous too… back to school I go!! One thing that is awesome about continuing education is that there are not tests or grades!! And this particular class is a lot of hands on work, which is the best way to learn in my opinion.

Another exciting news is we have found another winter squash that we love!! Okay maybe it is just exciting to us, but I think Katie would love it too ;)

DSC_0047 We made some mesquite avocado pudding (minus the carob) and used some as our salad dressing for our salad!

Mix all around.

Twins Question: What is your favorite winter squash? Have you ever thought about going back to school? I know many bloggers are in school, so I know I am not alone.

Your roasted squash looks so yummy! I’m heading to the store to make this for dinner tonight.
Good luck going back to school, it must be really exciting!
I just finished the 500 side lunge jumps, it was a killer workout.

I think this is the squash I ate in France all of last winter! If it is, it’s amazing steamed and then blended as a soup with some curry powder!

If you start doing web design I will definitely be requesting help as you have such great taste :)

Congrats on the good news! I’m a huuuuuge proponent of going back to school – at any age! And you too are so young anyways. You have to figure that you aren’t entering some super long program, like med school. FYI the average age of med school entry is 28. That means 3-4 years of med school plus 4-7 years residency. Sooo I’m sure you’re schooling won’t require close to that much :)

Congratulations on going back to school. I wish I could study nutrition, but I need to save up for my little ones to go to college at this point. I am a pumpkin lover! I can’t help it. I will have to look for that one though. I am all about trying new winter squashes!

Hmmm, butternut squash is on the menu for tonight. I might have to try this. We don’t have beats though. But it looks great.

Also, made your sprouted chick pea socca the other day. MAN that was time consuming. It took forever to hull the seeds. I had to hull two cups to make enough for both my wife and I. We topped it with a raw pizza sauce and raw veggies. It was pretty good. Crust needed more flavor though.

I love red kuri squash! I made a curreid kuri soup (hehe) with one this fall. I like that it is sweet, but not too sweet. I think butternut is my favorite for its versatility – you can go sweet or savory with it. Most others are so sweet, you can’t really do the savory thing.

My favorite salad is lettuce, beets, winter squash and tomatoes. Simple and so good!

That’s awesome on the web classes, I would love to do that too. I did a two-year in graphic design years ago while getting another degree in IT, but haven’t worked in that field in awhile. I could kill hours tinkering in Photoshop and web design!

I have never tried that squash, but clearly I must! Currently my favorite is kabocha squash.

I used to get kuri squash at the farmers market all the time when I lived in CA. Yummy!

I congratulate you on thinking about taking some classes – an exciting thing, especially when it’s developing skills you’re already using. I, too, am thinking of going back to school and am excited for it.

Congrats on going back! School’s awesome :) I’m a week away from graduating (finally!) with two degrees and I’m already registered to go back next semester. This time I’m departing from all I’ve learned with my English and History degrees and I’m starting all over. I want to go to grad school to get my master’s degree in Nutrition but I don’t have the prerequisites I need to get into any program. In February I start taking Anatomy (I need this for my Pilates certification too!), and in the fall I’m going to start taking nutrition classes. I’m so excited and so nervous – it’s a hugee change but sounds like fun.

Sounds like there’s so much going on for you two lately! I hope you’re staying sane!!

the red kuri squash is so yummy! That’s one of the first squashes we tried with YS2 when introducing him to solids – he loved it of course!

Congrats on the study idea. That sounds right up your alley and I am sure it will not even feel like you are studying as you will get alot of enjoyment out of it. That salad is looking pretty yum too :)

I’ve been kabocha obsessed for quite a while now. But you inspired me to try the red kuri and now I’m not too sure about my favorite anymore. Its amazing!! Thank you :)
I have yet to try blue hubbard but I’m thinking I should!!
