It was the morning before Christmas.
Everyone was still asleep, except for two little elves.
Elf 1: What should we make Santa for breakfast?
Elf 2: He loves pancakes! What about blueberry?
Elf 1: Okay, now we cannot just make blueberry pancakes. Santa needs something special before his big day.
Elf 2: We could wrap the blueberry pancakes up like a cannoli!
Elf 1: Perfect!
So the little elves hurried in the kitchen as Santa was waking soon.
Santa we present you with Blueberry Cannoli Pancakes!!!
Pure2raw recipe: Blueberry Cannolis Pancakes
- 1 pancake recipe (we followed this one, just added a little more milk to make them thinner pancakes, plus we used sprouted flour)
Make pancakes according to the directions.
- 1/3 cup blueberries (we used frozen that we thawed a little)
- 1 cup cashews (soaked for 20 minutes)
- 15 drops stevia
- 2 tbsp water
- 2-4 tbsp coconut milk (add still enough till desired consistency)
Place Blueberry Creme ingredients into Vita-mix blender and blend till smooth.

- maple syrup
Fill and roll pancake cannolis.
The two elves struggled making them perfect.
Elf 1: I know, I know. UMM
Elf 2: What are we going to do???
Elf 1: It will be okay. We will cover our mistakes with more blueberries and maple syrup. Maple syrup will save it!!

Santa: Do these pancakes have gluten in them?
Elf 1: haha no Santa they are free of gluten, dairy, eggs, soy and low in sugar!
Santa loved them! They were real simple, not too sweet, tasting pancakes! Just perfect to get his day going!!
Santa and Mrs. Claus approved!
