squash veggie salad

Hey friends,

We really have been enjoying our squash veggie salads lately, this one here we had for lunch yesterday.  We find them to be very satisfying :) IMG_4674

Sorry for the quick post, but we are still unpacking me into my new place. But things are going good.  I even managed to find something to wear (finding things in my place yesterday was a journey in of itself), and Lori and I went out last night with new and old friends!! Both of us really enjoyed a night of letting lose :) maybe a little too much

Now we are off to a blog meet-up!  Sure has been a busy weekend so far, what have you done this weekend? Anything exciting?

This looks delicious. It is amazing how julienning veggies makes them not only look more appealing, but also makes them less offending to those that can’t handle veggies (yes… I said it. But I live in Texas these days).

Btw… Letting loose is great! Hope it involved some great wine. :)

I love me some squashes too! These look great! We enjoyed some much needed family time with the boys and enjoyed quite a few Christmas movies. I hope you had a great time at the meet up!

I had the most relaxing weekend :) Made a bunch of food for neighbors, presents for extended family, and sand Christmas carols with my sister by the fire….ahhh…Christmas season :)

glad to hear the tummies are getting better! i ended up catching a cold from nate this weekend. boo! i drank a carrot-ginger-cayenne juice yesterday and had an avo-apple-ginger-lemon smoothie this morning sans ice. apparently, the ice cold on an empty stomach does not bode well. but i’m learning and my stomach is feeling better~

I didn’t realize only you were moving and not both of you. That’s got to be an adjustment! Hopefully the move went well. and yay for letting loose! You deserve it! My exciting weekend involved a quick road trip and decorating a tree, which isn’t done but the lights are on! ;)
