We received a comment about our raw brownie cashew sandwich if it can be made with dates? Yes it can! And the reader came back to let us know it came out and they were great, Love that!
Ever since then we have been wanting to remake this brownie sandwich. Although we had to make some changes because we did not have all the ingredients on hand ready to go. So this time around it was not rich like a brownie, more like a soft chocolate cookie. We used carob so it would be less chocolatly.

inspired by Brownie Sandwich
Changes we made:
- replaced the 2 cups of cashews with a mix of pumpkin seeds and coconut flakes, grind into flour
- did 1 cup cocoa and 1/2 cup carob
- did dates instead of agave
Roll out dough and cut it into circles using a cookie cutter. Now depending how big or small your cookie cutter is, will determine how many cookie sandwiches it makes.
Place in fridge while you make the filling.
The changes we made to the creamy filling:
- we did equal amounts of coconut oil and coconut butter
- added 1/2 tsp cardamom to the filling
Scrape the creamy filling out of vita-mix blender into a bowl and let set in fridge till firms up.
Remove from fridge and use the same cookie cutter to cut out filling.
*Warning: this is a messy and a little time consuming recipe, but worth it!
Set in fridge to set a little.
Time to make sandwiches.
Enjoy this not to chocolatly, not too sweet, heavenly little dessert!
Next time we will have to get sprinkles to finish the dish like this amazing lady did.
