Yoga and carrot cake

Last year it was our goal to do more yoga. Well it did not really happen as much as we planned, but thanks to Katie, we went to another hot yoga class at Y2Yoga this past Saturday and enjoyed a Hot Vinyasa class this morning :)

We got one month unlimited!!! We realized we need a yoga studio in order for us to really practice yoga. We hope by the end of the month we will be changed…for the better, more grounded, more at peace with our self, and hopefully less stressed.

Great yoga goes hand and hand with cake, right?

I really like playing around with different setting for photos, this one is more of an antique look.

We love our raw carrot cake! Although this time we made it with agave instead of dates.

First you  make the carrot-apple pulp.

A little under a 1lb of carrots and 2 apples. We had leftover pulp, do not worry we did something else fun with it!

Add the coconut flakes, agave, and spices (this time we omitted the raisins)

DSC_0063 Love how this carrot cake recipe is flourless and egg-less and full of fiber thanks to the pulp!

Make coconut butter frosting (a mix of butter, coconut milk, vanilla, stevia)

Do you consider agave a processed/refined sugar?

Teri – we use clear raw agave. It is still sugar, but less processed than most agave on the market. We order it online. We try not to use agave a lot, but it does help with texture sometimes. To us, sugar is still sugar no matter what form, so try to watch our intake. You could always use maple syrup or dates instead of agave. I hope this answers your question.

Totally unrelated, but wanted to give a shout out for your socca recipe!!! I love the pumpkin version, and I eat the entire batch in one serving… not sure if that’s normal or not ;) haha but it’s just too good not to eat it all at once!

It’s been my goal to get into more yoga this year too, but hat hasn’t happened with half marathon training and other fitness goals. I need more time! :-P

The carrot cake looks wonderful, more reasons I need to dust off my juicer soon! I adore carrot cake and that it’s more of a healthy splurge. :-)

Carrot cake is and will always be my favorite cake. Its really the only kind I like. This looks like I want to reach into my screen in and grab it!

I absolutely love your carrot cake recipe!!! It’s very yummy:) I’ve made it quite a few times. The only problem is if I want to eat this for dessert and I’ve eaten any nuts or seeds earlier I can’t digest the dates and raisins:( I seem to have a food combining issue, mostly with fruit. I can eat it alone or with coconut but for some reason it needs to digest first before I can eat other things. It’s a pain in the butt!!….LOL Do you girls have any issues with this sort of thing at all? I have had to do so much work to cure my digestive system and I know you girls are in the process of doing the same. So I was wondering if or how you deal with things like that….Thanks:)

Jen – sorry to hear, and yes food combining can be tough and each person is different. But it is good you are aware. This time we did not use raisins or dates, but used agave and seemed to do just fine. If wanting it for dessert you could try waiting at least 3 hours after eating something else, or even have it with digestive enzymes pills. We are still playing around with our food combining as honestly each day is different. Some times we can things together and then the next not so much. It really sucks having a sluggish, sensitive digestion system. Keep us posted on how you are doing :)

OH heavenly smells coming from my dehydrater(love)….didn’t add agave and just thru in 4 dates and the raisins and will top wth the icing and walnuts(mouth watering–only 4 more hrs – grr).

Hi Ladies
Just a quick question, since this cake is bigger than the carrot cake you made in ramekins do you still dehydrate for a total of 8 hours? I dont have a dehydrator but really want to try this recipe so will be using my oven. I have to make a few changes since I have IBS and am on a grain, dairy and sugar free diet. So do you think it will work if I swap the apples for mixedberries or strawberries, and use egg instead of agave?

Yes you can bake the carrot cake in oven. Not sure about switching out the apples for berries as we have not tried that, all we can say is try it. And yes eggs will be fine.

Your welcome Teri. We get the clear agave from Ultimate superfoods, but I know other online resources for it. Just google clear raw agave and happy shopping :)
