We do not have a recipe inspiration today, but instead we are participating in a Raw Cookie Sandwich Challenge. We love challenges when we have the time for them, we have done a raw ice cream challenge before and had fun doing it!

um, ya we live for dessert
Pure2raw recipe: Macadamia Nut Butter Mint Chocolate Chip Cookie Sandwich (gluten-free, vegan, raw)
Ingredients:
Cookies:
- 1/2 cup coconut flakes
- 1/4 cup pumpkin seeds (or any nut of choice)
- 1/4 cup lucuma (if do not have use more coconut or seed/nut flour)
- 1 tbsp vanilla (we use an alcohol free so adjust to taste)
- 2 -3 tbsp maple syrup (adjust to taste)
- 1 tbsp water (only if needed)
- 1 -2 tbsp cacao nibs or chocolate chips
Place all dry ingredients into a food processor grind into flour. Then add in the wet ingredients. Adjust the sweetness to taste, as we used little so our cookies not very sweet.
Roll cookie dough out and cut into circles using a cookie cutter. Than place your cookies in fridge or freezer to set, no dehydration needed!
Green Mint Filling:
- 1 avocado
- 1/3 cup irish moss (or coconut butter)
- 1 tsp mint extract
- 1 tbsp sunflower lecithin (optional)
- 3-4 tbsp maple or agave
- a few leaves of fresh mint
Place all filling ingredients into a blender and blend to smooth. Takes some time. Again adjust sweetness to taste.
Mac-nut butter
- 1 1/2 cups soaked macadamia nuts
- about 1/2 cup water
- 2 tbsp maple syrup
- splash of vanilla extract
Place ingredients into blender and blend till smooth. Will get thick and a little hard to blend, take breaks. But it will get there. We honestly feel in love with this nut butter more than we thought. Really happy with the results.
These raw cookies made about 8 circles. The mint filling and mac-nut make a lot, so you can double the cookies or save the fillings for another time. Can freeze.
These mac-n-mint cookie sandwiches turned out to be a little messy…but messy is good, right?
Another great thing about these cookies are that they do not have to be dehydrated! We wanted a cookie that was soft at room temperature. We did place them in the freezer to get a little hard for us to build the sandwich. This raw cookie sandwich is great cold or room temperature.
I think I can safely say this is the ultimate cookie sandwich…haha well if you like a more sweet and savory dessert like Lori and I do.

These look wonderful. Love the green filling (avos!) and the easy cookie ingredients. I think I may experiment with these today. Fun and easy stuff here. And I really like how they could be ice creamy or travelable(ish).

We actually rolled out the dough and cut into circles using a cookie cutter (I will update the post) and than set in fridge.

Holy Cow!! That is all I have to say. It all looks delish.
I could never make those. Despite my culinary training at one of the best culinary schools, I was trainged with pure butter and this thing called white flour. The second I try anything “raw” I fail! I need you guys to teach me how to make this and everything else!
