The Ultimate Cookie Sandwich

Loved hearing everyone’s guesses on what Lori was holding.

We do not have a recipe inspiration today, but instead we are participating in a Raw Cookie Sandwich Challenge.  We love challenges when we have the time for them, we have done a raw ice cream challenge before and had fun doing it!

The lovely Lisa and Nicole are hosting a raw cookie sandwich challenge, cookie sandwiches are somethings we love ourselves.…Carob cookie sandwich, brownie sandwich, mallomars, and smores

um, ya we live for dessert


These mac-n-mint cookie sandwiches turned out to be a little messy…but messy is good, right?

Another great thing about these cookies are that they do not have to be dehydrated! We wanted a cookie that was soft at room temperature. We did place them in the freezer to get a little hard for us to build the sandwich. This raw cookie sandwich is great cold or room temperature.

I think I can safely say this is the ultimate cookie sandwich…haha well if you like a more sweet and savory dessert like Lori and I do.

Twins Question: What would be your ultimate cookie sandwich combo?

You both make everything look so incredibly delicious! Like I want to reach my hand into the screen and grab it. And the composition of the photos- oh you know I love it all!

These look wonderful. Love the green filling (avos!) and the easy cookie ingredients. I think I may experiment with these today. Fun and easy stuff here. And I really like how they could be ice creamy or travelable(ish). :)

This is brilliant, your photos are making me really want a cookie sandwich! I’m a big fan of almond butter s’mores.

We actually rolled out the dough and cut into circles using a cookie cutter (I will update the post) and than set in fridge.

I could never make those. Despite my culinary training at one of the best culinary schools, I was trainged with pure butter and this thing called white flour. The second I try anything “raw” I fail! I need you guys to teach me how to make this and everything else!
(PS my first attempt at make socca today. shaking in my boots!)

I just found out my oven at my summer house can go down to 110 or lower, so I can dehydrate!! I am soo excited :) I’ll have to look up your other recipes. Do you have any dehydrated flat bread recipes?

The irish moss in the green filling is irish moss paste or just soaked irish moss?
Starting to experiment with irish moss and I came across your recipe that I have to try now!!!
