I guess Lori and I cannot get enough ice cream sandwiches.
We wanted a cookie that was soft, simple, and no dehydrating or cooking required. We had pecans on hand, so we thought lets make cookies! One thing about using pecans is that they do provide a buttery taste and texture, and these no bake pecan soft cookies sure had that.
Pure2raw no bake pecan soft cookies (raw, gluten-free, vegan, soy-free)
- about 2 cups pecan flour (we grinded pecans and measured out 2 cups)
- 2 tbsp yacon syrup (or maple or agave)
- 1 tbsp vanilla extract (we use an alcohol free, so adjust to your taste)
- 1 tsp ground ginger
- 1/2 tsp cinnamon
Blend all ingredients in a food processor till a ball is formed. Dough will be sticky and soft. Adjust sweetness and flavors to taste. If not sweet enough, we recommend adding in a few drops of stevia.
Makes about 6 cookie sandwiches.
How to assembly:
We used a small cookie scooper to place the dough at the bottom of a mini cheesecake pan.
We did one scoop per circle, pressed them down and then set in fridge as we made the easy peach ice cream.
Then filled the cookies, using the same cookie scooper, with some peach ice cream. And topped with a scoop more of pecan cookie dough, which we lightly pressed down. Set the cookies in the freezer, or even fridge.
These no bake pecan cookies are for pecan lovers!!! Have a strong pecan taste, but the peach ice cream helped balance out the flavor.
Substitutions for both the pecan cookies and peach ice cream:
For the peach ice cream if you do not have macadamia nut butter, you could use almond or cashew butter to make the ice cream.
As I mentioned, these cookies are for pecan lovers, so use your favorite nut flour.
