hello again luvs,
The other night Michelle and I enjoyed a very yummy salad, like we normally do in the evening, but this time we made a salad dressing out of broccoli and onion. It was easy and delicious! Not much more we could ask for with our salads. Sometimes I feel as if we are salad snobs, haha… anyone else?
Usually for our salads Michelle and I like to use straight tahini or avocado for our dressings. Other ways we like to make dressings is with a vegetable as the base. We like blending hemp seeds with some vegetables and spices to make a dressing. so simple and great way to get more veggies in us.

Here is what we did:
Pure2raw Recipe: Veggie salad with Broccoli Salad Dressing
Salad ingredients
- 1 large zucchini, spiralized
- 2 small cucumbers, spiralized
- 2 stalks of romaine, chopped
- 1 steamed onion
- 1/2 head of steamed broccoli
- 1 tbsp hemp seeds
- 1/3 cup sauerkraut
Broccoli Salad Dressing
- 3 tbsp hemp seeds
- 2 tbsp tahini
- 3-4 broccoli florets, steamed
- few steamed onion slices
- 2 tbsp kraut juice (can use lemon juice, ACV, or any liquid of choice)
- 1 tbsp gluten-free mustard (add more or less depending on your preference)
- sea salt is optional (we did not use it but you can)
- plus the butts leftover from the spiralized zucchini and cucumber
To make the dressing you can either place in a mini food processor or in a blender. You may add splashes of water till you get the desired consistency for your dressing. We left ours on the thick creamy side.
Toss your broccoli dressing over your salad and enjoy. We used this spiralizer to spiralize our veggies. We use our spiralizer just about everyday, it is the best. (we also have a smaller veggie spiralizer that works great too)
Dressing takes about 2 minutes to make and serves 1-2.
As I mentioned before, Michelle and I have been enjoying a similar dressing like this one each night with our salads. We normally make our salad dressings just enough for that evening. Occasionally we do make large batches of sauces. We like to mix things up with our salads so they never really get boring to us.
Other veggie salads we love:
Creamy spinach artichoke salad
Wilted kale amaranth salad with B.L.S. spread
wow, I guess you can safely say we are salad freaks, haha, something we are proud to be.
Twins Question: Do you make your own salad dressing? If so, have you ever used vegetables to make the dressing? What was your favorite kitchen equipment? Do you have a spiralizer?
hands down favorite kitchen equipment is my vita-mix but the spiralizer is definitely in the top 5!
till next time, xoxo

WOW! I never thought about putting veggies into the dressing?! Brilliant! Must try!
And I always make my own dressings. My favorite is a dijon dressing-so easy. Just dijon mustard, balsamic, and olive oil.
P.S. I am bookmarking this because sometimes I get in a rut with salad ideas. This is a great list!
I seriously would never think to use broccoli in a salad dressing– brilliant!
Thanks Anna!
again! Another awesome recipe I need to try! I loved your yoga intervals as well! Such a good idea!
veggies on veggies!
That salad looks so good. I need to be more adventurous with my dressings.
thanks Lauren, we just try to have fun with the dressings
sometimes they turn out great and sometimes not so much haha
This salad looks so amazing. And I definitely hear you guys on the salad snob thing. I am right there with you!
awesome!
Your photography just gets more beautiful in every post!
I love brock salad and I why make my own rendition/recipe for dressing…yours looks wonderful.
thanks Averie!
I have never thought to make salad dressing out of veggies! I guess it’s partially because I don’t have a good high speed blender.. oh how I’d kill for a vita…
I do the veggie puree as dressing all the time. In fact, other than the hemp seeds, I’ve made this exact dressing! Love the vita mix!!
I eat a salad a day, but I’ve totally forgotten about my spiralizer all summer! And with all my zucchini from the garden. Oh, yeah. Its on.
Katie you better start using that with all those zucchinis haha
That looks and sounds delicious! I really love my salads – I made a lovely creamy avocado and basil dressing last week and a carrot dip that I added too much water too so I used that as a dressing instead! I adore my spiraliser to, makes salads so much more fun
I normally prefer avocado as a dressing too! I’m just not a fan of most salad dressings. But this looks really tasty!
Your salad sounds REALLY amazing! Beautiful pics too!
your welcome Alex, glad we could help
