broccoli salad dressing

by lori on August 8, 2011

hello again luvs,

The other night Michelle and I enjoyed a very yummy salad, like we normally do in the evening, but this time we made a salad dressing out of broccoli and onion. It was easy and delicious! Not much more we could ask for with our salads. Sometimes I feel as if we are salad snobs, haha… anyone else?

Usually for our salads Michelle and I like to use straight tahini or avocado for our dressings. Other ways we like to make dressings is with a vegetable as the base. We like blending hemp seeds with some vegetables and spices to make a dressing. so simple and great way to get more veggies in us.

Here is what we did:

As I mentioned before, Michelle and I have been enjoying a similar dressing like this one each night with our salads. We normally make our salad dressings just enough for that evening. Occasionally we do make large batches of sauces. We like to mix things up with our salads so they never really get boring to us.

Other veggie salads we love:

Leek zucchini pasta salad

Swiss chard hemp seed salad

Creamy spinach artichoke salad

Ginger lentil salad

Sweet potato avocado salad

Squash veggie salad

Beet cheese vegetable pasta

Wilted kale amaranth salad with B.L.S. spread

wow, I guess you can safely say we are salad freaks, haha, something we are proud to be.

Twins Question: Do you make your own salad dressing? If so, have you ever used vegetables to make the dressing? What was your favorite kitchen equipment? Do you have a spiralizer?

hands down favorite kitchen equipment is my vita-mix but the spiralizer is definitely in the top 5!

till next time, xoxo

Lori

WOW! I never thought about putting veggies into the dressing?! Brilliant! Must try!

And I always make my own dressings. My favorite is a dijon dressing-so easy. Just dijon mustard, balsamic, and olive oil.

P.S. I am bookmarking this because sometimes I get in a rut with salad ideas. This is a great list!

I have never thought to make salad dressing out of veggies! I guess it’s partially because I don’t have a good high speed blender.. oh how I’d kill for a vita…

I do the veggie puree as dressing all the time. In fact, other than the hemp seeds, I’ve made this exact dressing! Love the vita mix!!

I eat a salad a day, but I’ve totally forgotten about my spiralizer all summer! And with all my zucchini from the garden. Oh, yeah. Its on.

That looks and sounds delicious! I really love my salads – I made a lovely creamy avocado and basil dressing last week and a carrot dip that I added too much water too so I used that as a dressing instead! I adore my spiraliser to, makes salads so much more fun :-)

I normally prefer avocado as a dressing too! I’m just not a fan of most salad dressings. But this looks really tasty!
