Well Michelle and I attempted to test coconut oil yesterday.
Coconut was something we decided to cut out of our first round of the elimination diet. When Michelle saw a holistic doctor a few months ago for her candida, he tested her for some food allergies. And she thinks she remembers being sensitive to coconut.
Coconut is something we love and were not ready to give it up. We felt like one of those people who know a food might be making them sick but not ready to “deal” with it or let it go.
But we know we needed to see. We needed to try. We needed to experiment.
So we did. We have been very surprised that we have been able to not have any type of coconut in 2 weeks! never thought that would happen, haha
The doctor of Diet Wise says to test a food you need to -
- eat it alone
- have a good size portion of the food
- around lunch time
- do a pulse test
- wait before adding any new food
Yesterday we decided to do the test late afternoon. After our workout and post workout smoothie digested, we each had 1 tablespoon of coconut oil. Yes, we had the oil plain, which we have never done before. It was a little weird to eat it like that, but we did it.
We did our pulse test. And then about an hour later we had coconut water (a whole can, which is about 2 cups).

Both of us felt pretty fine after the coconut oil, and our pulse rates seemed pretty good. But after the coconut water, we both felt weird. Got a little headache.
Then as we continued to do work. It went away.
So are we sensitive to coconut? was it the sugar in the coconut water? is it that we are running on little sleep? or is it something else?
At dinner we pan seared some tuna in coconut oil and seemed fine. No problems after that meal. And both woke up this morning feeling good, besides tired (we have been staying up past midnight doing work).
Also, to add more to the puzzle we realized the Udo’s oil contains coconut oil, which we had some the day before doing this test. So that might of messed up our results.
Now what do we do?? good question, to be honest we have no idea. We think we will continue to have coconut, just not over do it. And maybe try eliminating it again and test at a later date.
For now we are trying to decide if we should test another food?
decisions, decisions….well off to enjoy this pudding.

hmmm interesting but my guess would be the sugar in the water. i don’t drink it specifically because of that but i eat flaked unsweetened, raw coconut and use the oil regularly. i’m interested to see how you tolerate more…

food allergies and the detective work that ensues can be such a frustrating process. B/c you could trial coconut water again on another day, with other food in your system, a different activity level for the day, a different sleep pattern, etc…and it could be totally fine for you.
I hope you figure out what’s going on..and can back to coconut one day

I wouldn’t be surprised if the sugar in coconut water would potentially give a headache…but I guess you just have to take note of this data you collected, and press on!

bummer, don’t want to go through the “trials” again,….so i just go with the flow and give my body what it needs, right now it needs good fats, so i try to stick with ones that are non allergy provoking. I think the coconut water has two much sugar in it for your system now! try fermented coconut water! its yuuummmm
I LOOOOOOVE that coconut water… however, it is higher in sugar content. But so good!

It’s all interesting and so tricky, isn’t it?
Another thing to think about: some people are sensitive to nuts but not to the nut oil. (I had a friend who had an anaphylactic allergy to peanuts, but no problem at all with peanut oil, for example.)
So, you might be ok with the coconut oil but not with the meat? But yes, do keep experimenting and you are so smart to bear in mind that there are so many other factors also in play.

I’m sure you’ll be fine with coconut oil- usually allergies are problems with proteins in the food, not fats (unless you have internal enzyme insufficiences, making you react to sugars and their polymers or lipids depending on what enzyme you lack). Coconut oil is all fat and mostly a type you can absorb straight from the small intestine. I read you girls thought you might have thyroid issues, coconut oil is really supportive of your thyroid. I can’t say much about coconut water as I don’t buy it. I tried it once and didn’t like it.

I just came across this post and thought it worth mentioning:
Coconut water does contain natural sugars, and it is a complete source of nutrients designed perfectly by nature for the human body.
Once it is exposed to oxygen it is ‘de-natured’, if it comes in contact with any metal it is ‘de-natured’ faster, then stored in metal, it is a chelator and pulls heavy metals into it(which helps in your body, but not so much when it is stored in an aluminium can.) I would recommend making sure your coconut water is straight from a fresh coconut, otherwise the down falls are not worth the purchase.:)
