today we have a fun and very easy recipe, perfect for a holiday treat to make yourself, give to a friend or take to a holiday party. something about thinking of the holidays always makes us so happy and giddy
nothing says I love you more than chocolate, right? and everything is better as mini’s, right?
Gillian these have your name all over it
Pure2raw recipe: mini chocolate hazelnut cookie biscotti (raw, gluten free, grain free, vegan)
prep-time: 10 minutes
bake time: zero
servings: depends how big you cut them, we got 36 mini biscotti
- 2 cups whole hazelnuts
- 1/2 cup coconut flakes
- 1/2 tsp sea salt
- 1 cup cocoa powder
- 1 tsp allspice
- 1 tsp cinnamon
- 6 tbsp maple syrup
- 2 tbsp coconut oil
- 2-3 tsp vanilla extract
Place whole hazelnuts into food processor and pulse till in small flour like pieces. Next add in coconut flakes, salt, spices, and cocoa. Pulse together. Then add in vanilla, maple and coconut oil. Pulse till combined. Batter should be moist and come together easily. Taste to make sure it has enough spice and/or sweetness for your liking.
*you can soak and dry the hazelnuts, but not necessary
Now to mold the cookie biscotti – dump batter onto a large cutting board and using your hands mold into a log shape or any shape you like. There is no magic shape or size for the cookie biscotti, mold till you are satisfied. Then slice into pieces.
these biscotti mini’s do not need to be dehydrated. we created these to be like a soft cookie but shaped as a biscotti.
a little chocolate…hint of spice…soft cookies that only take two bites to devour
why unbaked? because it is quick and easy
why chocolate? why not
why hazelnuts? because tired of almonds
yes we are aware that traditional biscottis are known as twice baked cookies and ours are not even baked! we call them biscotti because of the shape and cookie because they are soft. you can name these anything you would like
now that we have you craving a mini chocolate raw biscotti you better go make yourself some.
these are rich in chocolate but not overly sweet. just the way we like them.
