pink heart cookie sandwich

by Lori and Michelle on February 10, 2012

before we get onto the recipe, we wanted to say a quick thank you for all the wonderful comments yesterday on our skin care post. if you did not see them, go check them out.  you all provided with some many things to think about! thank you!

Happy Early Valentines ;)

now we know you are planning on making your loved ones mini triple chocolate cream cakes, but what is a better way to show someone you love them with LOTS of chocolate.

raw cookie sandwich

how about pink heart cookie sandwiches for valentines day

we were hoping more for a rich brownie sandwich much like our raw cashew brownie sandwich. but since we made these cookies low in sugar, they were more light like a cookie. the filling is similar to our raw raspberry cupcakes. using natural sugars (from the fruit) to sweeten it.

nut based cookie recipe

like many of our recipes, we dug into our archives. our inspiration for these pink heart cookie sandwiches came from other favorite cookie recipes – raw mallomars, raw mint chocolate chip cookie sandwich, and raw carob brownie sandwiches.

heart shaped cookies

who doesn’t want a cookie made from wholesome natural ingredients.

flourless cookie recipe

warning you will get a little dirty!

making raw cookie dough sandwich

cookie recipe with no flour

but that just makes it more fun

dairy free cream

raw chocolate for valentines

you now have beautiful raw pink heart cookie sandwiches to enjoy with your loved ones, or  maybe just for you! they will keep well in the freezer.

healthy homemade cookies

what we can we say we love chocolate. we love cookie sandwiches. we love raw desserts. we love eating raw desserts.

Twins Question: What about you? Do you like raw desserts? Do you like cookie sandwiches?

Till next time,

L & M

Beautiful!
I love raw desserts, but I try not to make too many because I have a hard time controlling my portions! Thanks for sharing—I love the ingredients. I’ve been looking for something use mesquite for!

I eat a lo of quick raw desserts and never really take the time to do fancier raw treats. These are adorable! I think I need to make some time for these!

Oh my gosh! You girls are genius! These look absolutely amazing and oh so pretty! I know you said to use any whole nut, but is there one you would suggest besides a brazil nut? I don’t have any right now and I really want to make these…now!

Reply

Lori and Michelle February 10, 2012 at 10:20 am

Maddie any nut would work, like almonds or cashews. just beware eat nut has different amount of fat and natural oils, so adjust water accordingly.

Looks wonderful. What is mesquite?

Reply

Lori and Michelle February 10, 2012 at 5:48 pm

Thanks Kathleen – mesquite is powder or flour that we use in our recipes for flavor, like in our chia muffins http://www.pure2raw.com/2011/10/dairyfree-high-fiber-low-sugar-mesquite-chocolate-chiaseed-muffins/ and buckwheat breakfast bowl http://www.pure2raw.com/2011/09/a-great-nondairy-milk-alternative-cereal-option/ we talk about it more in those posts, but it similar to cocoa powder yet has a different flavor. let us know if you have any other questions

Hey,
I have decided to make this recipe for a school prac lesson and we only have a short period of time, would you be able to let me know how long the filling takes to set (the school are looking for high tea ideas and would love to use this) :)

Reply

Lori and Michelle May 24, 2012 at 6:58 pm

Demee, this filling needs to set for at least 30 minutes.

Demee May 26, 2012 at 10:19 pm

Would the filling be set in a 45 min lesson ?
