before we get onto the recipe, we wanted to say a quick thank you for all the wonderful comments yesterday on our skin care post. if you did not see them, go check them out.  you all provided with some many things to think about! thank you!

now we know you are planning on making your loved ones mini triple chocolate cream cakes, but what is a better way to show someone you love them with LOTS of chocolate.

how about pink heart cookie sandwiches for valentines day

we were hoping more for a rich brownie sandwich much like our raw cashew brownie sandwich. but since we made these cookies low in sugar, they were more light like a cookie. the filling is similar to our raw raspberry cupcakes. using natural sugars (from the fruit) to sweeten it.

like many of our recipes, we dug into our archives. our inspiration for these pink heart cookie sandwiches came from other favorite cookie recipes – raw mallomars, raw mint chocolate chip cookie sandwich, and raw carob brownie sandwiches.

Maddie any nut would work, like almonds or cashews. just beware eat nut has different amount of fat and natural oils, so adjust water accordingly.

Thanks Kathleen – mesquite is powder or flour that we use in our recipes for flavor, like in our chia muffins and buckwheat breakfast bowl we talk about it more in those posts, but it similar to cocoa powder yet has a different flavor. let us know if you have any other questions

I have decided to make this recipe for a school prac lesson and we only have a short period of time, would you be able to let me know how long the filling takes to set (the school are looking for high tea ideas and would love to use this) :)
