well it is finally Friday! TGIF right
phew this has been one of those weeks that just feels like it is never going to end. we had some really long days but all worth it in the end. especially when we made some chocolate donuts to start the weekend with!
we loved all our facebook love on the preview picture we showed last night. some of you mentioned blueberry lavender, which is a combo we will have to try next!

for some time now we have been discussing that we wanted to re-make our chocolate donuts from a while back. we finally got around to doing it. better late then never right?
gluten free chocolate baked donut with a dairy free berry frosting

chocolate and mint is by far our all time favorite combo. but we are also fans of chocolate with fruit especially berries. though, we are find that chocolate goes with just about anything! would you agree?

here we go again with our love of anything donut related. it is so weird to us that we have fallen in love with donuts so much these past few years, as we were never HUGE donut people growing up. maybe it is now that we can make them ‘a little healthier’ then what you see in the stores or at the local donut shop. or maybe it is that we just love the shape. they are just so cute looking to us. especially when we make mini donuts.

speaking of, we need to get a new donut pan as one of ours is getting worn out. haha
this chocolate donut is gluten free, but we used eggs this time. we wanted to see what the eggs did with our batter. if you would like them to be vegan please follow our chocolate mint donut recipe just remember they are a little delicate. we still hope to remake our chocolate vegan donuts again and make them even better!
back to this new donut recipe. we loved it! it came out amazing. one of our best baked cake donuts yet!

pure2raw recipe: baked chocolate donut with raspberry frosting (gluten free, dairy free, peanut free, soy free, low in sugar)
inspired by our chocolate mint donuts (which are vegan!)
prep time: 5 minutes
bake time: 12 -15 minutes at 350 degree oven
ingredients:
- 1/2 cup brown rice flour (or any gluten free or regular flour)
- 5 tbsp flaxmeal
- 5 tbsp cocoa powder
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp sea salt
- 1/3 cup sugar (coconut sugar, xyitol would work)
- 3 tbsp coconut oil (any oil)
- 1 whole egg
- 1/2 cup coconut milk (or any non dairy milk)
directions:
place all ingredients into bowl and stir together. make sure all wet ingredients are at room temperature. scoop donut batter into your donut pan. let cool in pan for a few minutes before taking out of pan. *if you do not have a donut pan you may use a muffin pan or mini bundt cake pan.
Bake donuts at 350 degree for about 12-15 minutes.
Serving – 6 donuts


dairy free berry frosting
ingredients:
- 1/4 cup berries (we used frozen raspberries berries that were thawed, but any berry would work)
- 1/2 cup cashews (soaked and rinsed)
- 2 tsp vanilla extract
- 2 tbsp coconut milk
- 2 tbsp maple syrup
directions:
to soak cashews, place dry cashews into a bowl and cover with water. let sit in water for a least 1 hour. rinse cashews well. then place cashews into blender with remaining ingredients. blend till smooth.
once donuts are cooled dip them into your berry frosting!

these donuts were so light, cakey, and perfect all the way around from the texture to flavor to the delicious raspberry frosting on top.

today we got a busy day. the time has come to officially move Lori and Gary into their new home. yep another weekend full of loading and unloading a uhaul, packing up boxes, unloading boxes, moving furniture…ya fun times! Lori has some fun house updates coming, plus our video of doing plank!!

those are so beautiful! my fave fruit is either blueberies, strawberries or blackberries. i also really love cherries! so i’m def a berry girl
honestly, when i eat at a restaurant i choose something that i know might be calorically dense but also good for me like a nice piece of lamb or a steak with seasonally veggies in grass fed butter

These sound great! What is your opinion on using almonds vs cashews in the frosting?
Stacey we prefer cashews in frosting because they get creamier then almonds, but almonds would be fine as well.

I wondered what you were going up use in your frosting… cashews sound delish indeed with raspberry. Loving the donut recipe, you definitely can’t go wrong with chocolate, ever.

I have loved frosting! Was one of those kids who always saved the frosting till last.
Berries and chocolate are a great combo, and I agree, chocolate goes with most things. Maybe less so with apples and grapefruits than with most other fruits, but still.

Girls these look amazing! I’ve never made homemade donuts but I really want to give these a go! Berries are one of my favourite fruits…but if I had to pick just one it would probably have to be bananas. They are just so versatile!

I made these! With no frosting (I didn’t have the ingredients) but I used carob (no cocoa powder) and no sugar – but I did use a packet of Splenda and I just realized I forgot the oil! Well anyway yum I love them

That berry frosting looks incredible. Is it sad that I wouldn’t mind a bowl of that in front of me – with a spoon of course, haha. I love all kinds of berries but I think the plain old apple is my favorite fruit when it’s in season

its like getting a donut @ dunkin wich is less healthy,and these taste much better than dunkin 2 me,and its helthier!!!
i have made chocolate frosting with walnuts in the past. you could give that a shot. I remeber melting choclate and processing it with walnut butter that i made in the food processor with a little agave nectar.

Flaxmeal is just flax seeds ground up? I remember reading that flax seeds should be bought whole and ground up when needed.
