quick protein muffin made in under 2 minutes

Hello again friends!

Is everyone having a good day? I hope so!

I wanted to come back today to share a recipe that I enjoyed today. Since Lori and I have been extremely busy here lately we needed I quick snack to get us through. And this recipe was born.

Now this recipe came from two inspirations that we have already made before. One being our quick cake that we enjoyed awhile back and the second recipe inspiration came from our individual protein muffin.

The recipe is made up of just 4 ingredients plus some cardamom for flavor.  I am obsessed with that spice. Anyone else? This recipe is gluten and grain free. Also featuring a new sugar that Lori and I are trying out called Erythritol. Have you heard of it?

Now we normally do not use our microwaves that much. So if you are not a fan of the microwave you may bake in the oven at 350 degrees for about 20-30 minutes. The microwave for us is usually used only when we need something made really fast.

This quick protein muffin is simple, tasty, and in between a dense muffin and a light cake. I topped my muffin with some coconut oil. mmmm so good!

Hi girls! This sounds great, especially with the coconut oil on top. My husband and I can’t wait for the waffle recipe! He’s hoping there’s protein in it ;o).

yes any sugar would be fine.

I just left it out and added 4 drops of liquid stevia. Worked fine.

I adore cardamom too! And erythritol may just be my favorite sweetener, although stevia gives it a good run.

Erythritol is my favorite – its the only sweetener I use because of its outstanding profile. I made this earlier but mixed in lychee with the flax meal and topped it with the coconut oil and a dash of lime juice – it was delicious.

Looks yummy! I use erythritol a lot…usually in combination with stevia. I guess that’s what truvia is made of but since I don’t want to support cargill (or whichever of those big bad companies who owns it), buying the non-brand name ones is way better!

I like using my microwave, I don’t have the patience for the oven! This looks great for a fast protein snack option, I make protein muffins all the time, and usually have them before bed. Never tried erythritol, I still have a ton of stevia. And definitely love that as a sweetener.

I try not to use my microwave very often but sometimes it’s necessary for things like this or for quick eggs. I made a microwavable chocolate protein muffin before and hated it – even topped with peanut butter. There wasn’t enough peanut butter in the world to make it taste good. haha

I’ll have to try this recipe and see if I like it any better.
